I think if you're just starting out this is a reasonable question. However, if you've been a photographer for a few years the best camera is the one that your lenses fit. I've just bought an A6700 to add to my A6400 and 7 lenses. The EOS R7 may have certain advantages but certainly not enough to justify replacing all my lenses.
How are you happy with Sony a6700? Have you ever felt that lowlight performance is insufficient with a6700? This seems to be my dreamcamera but I have this little concern about lowlight performance
no matter how great a particular camera body is, the only reason to buy a camera body is because you can attach a variety of lenses. The canon has very few lenses----VERY FEW!... whereas the Sony a6700 camera body has literally hundreds, including many brands that love to make lenses for Sony Emount camera bodies, including Sigma, a remarkable company that offers amazing high quality lenses at very inexpensive prices.

Great comparison. I moved from Canon to Sony for the lenses a few years back. Plus Sony was just way better at 4k back then. The overheating with the Sony is very disappointing, but I'm going to stick with it. The Canon is just too big and I wouldn't want to carry it around.

A lot of people here are saying you have to buy Sony. Because of the 3rd party lenses. A lot of those lenses have restrictions from Sony. Canon has adapters that will work very well with RF cameras. IBIS in the two Canon R7s I bought (and sent back) fought like hell with IS in my EF lenses -- and stability was as bad as no IS at all. Off-brand IS lenses worked fine because the R7 simply ignores them. If you stick with RF lenses or off-brands, you probably won't see any IS issues. But if you are planning on using EF lenses -- buyer beware (FYI -- I am not the only one to notice this).
I see a different story: For photo my two, three stabilized lenses work well especially the 100-400 EF mark ii. In video that lens / the stabilization system+software try to compensate for everything maybe using gyros and image recognition which leads to unwanted effects due to some smoothness of corrections. Maybe a 100-400 on an APS-C camera shoud be used with a tripod (where the IBIS works fine against wind induced motion, it is not a 40 kg tripod :).
