She is telling you how to keep your oven clean by doing this after each use. She is NOT telling you how to clean a neglected oven. I use this method on my air fryer and it really works. You should use white vinegar.
If you pour boiling water on breadsoda, it chemically reacts to form washing soda, sodium carbonate. You will see it fizz during the reaction. This may be more effective at cleaning than breadsoda.
A comment. Vinegar and baking soda cancel each other out. Vinegar is acidic and baking soda is alkaline. Just make a paste of the baking soda and spread it on the surface. It does an amazing job. I watched this video where the guy said, "spread butter on a dish then spray it with vinegar. The vinegar will not remove the butter" you need dish soap to break down the oils. 😮 Thank you ever so much for showing how to remove the door. I looked and looked and couldn't figure it out. You have made cleaning easier. I'm subscribing.
It would be an extraordinary coincidence to achieve molar equivalence for neutralisation just by adding uncalculated and unweighed amounts of the reactants, however, so the mix remains alkaline (the baking soda is only alkaline when it dissolves in water and ionises) for some time. The vinegar/sodium bicarbonate mixture does have efficacy when surface grime is the issue as it is in ovens. The CO2 bubbles produced in the acid/bicarbonate reaction assist to lift solid material from the surface for easier cleaning, and the CO2 also forms more carbonic acid when dissolved in the water, increasing the rate of the acid/bicarbonate reaction and producing more bubbles.

My oven is ancient so there's NO way I'm getting that door off. Most discouraging. Even though it's a very small oven it's still very hard to reach all the way to the back of the oven with my T-Rex short arms! I'm cleaning my oven right now even though it's 1:00 A.M.!
That looks like a European oven.I have a self cleaning one.Take out the metal racks and turn it on.3 hrs later the door unlocks.I spot treat the bad spots with Dawn liquid and water.I also refuse to take the door apart.
Me three. I heard add bit of ammonia to warm water in glass bowl open doors and ventilate. Do when no one’s home for a bit as fumes are bad but for bad build up works then do vinegar wash to maintain.

That may work for the moment but vinegar is acetic and eventually it will attack the metal parts. Not asking but from experience I know that.
