WOW those do look Amazing Gary! I've never removed the skin like that before but it's very interesting and they were so uniform so I can see how they could win a competition! I usually just trim them up and make them look all pretty and stuff 😀 but I've never takin that extra step. Great job, and You get a Gold Medal from me 😀

Super cool Gary and they look beautiful! I’ve done it a few times at home and helped out in a comp, they are a bit of work for sure, but presentation is awesome. Crispy skin is hard at low temps. I’d eat those any day! Have a great weekend brother!
Those look awesome. Never thought to trim up that way. Do you think the braising affected the skin crispness and bite through? Wonder if putting back on grill dry and higher temp would crisp up the skin better? I did this step with some drumstick popsicles and after glazing the skin on those remained pretty good. These thighs looked amazing and great work!
