They are upgraded to modern standard, last upgrade was after 2015, they have more technology than anything Ukraine currently has.
Plus they can carry much more advanced weapons and especially gbu39 GPS glide bombs and the anti radar missiles with more tricks than what Ukraine could use before.
The systems onboard allow them to pin point radar installation positions for drone recon and so much more.

There's been 3 confirmed F16’s been shot down by
two to enemy radar guided SA-6 and SA-3 surface-to-air missiles (SAMs) and one to a shoulder-launched SA-16 missile. Other F-16s were damaged in accidents and by hostile ground fire but were able to return to base and be repaired.

You forgot to add, Ukraine lost his first F16 what has been confirmed, not exactly obvious how. Has been destroyed by crash, friendly fire or by Russians. Probably 2 more F16s, were destroyed on the ground, at hangar. These 2 aren’t confirmed yet.
