I know for some gamers (especially the native English speakers) feel it's a hassle to use Japanese dub and look at the English sub, but come on! It feels weird watching something clearly sets in Japan but the people talk in English. I just don't get that feeling and atmosphere if I watch a playthrough or speedrun using English dub :/

Yeah I played the game with Japanese audio and just turned on English subtitles cause it would not feel right in English. Same reason I don’t watch dubbed anime.
It is like that with many foreign films or games, Be it where they are either set in or also created in. People have fits if it's in a language they cannot understand without subtitles, But honestly, Its more annoying to listen to lousy voice actings.
If a game is set in Japan and shit even made in Japan, it's not only going to sound WAYYYYY better in its native language, but it fits much better as well. Certain tones or moments will have more dramatic and heartfelt moments than the non-native languages can pull off.
English especially can be very monotoned in voice acting. Just watch some of the English dubbed anime, even their screams sound flat lol. Whereas the original Japanese voices tend to have much more range and emotion.

He is a sculpture also known as old shinobi who's nickname is "sekijo" that almost become shura, but stopped by isshin by cutting his left hand
At the end before last boss fight (genichiro and isshin sword saint)
You can back to dilapidate temple and see the sculpture gone, you can find him at the castle entrance? (Its where you fight "gyoubu masataka" the guy with a horse) and fight him after he become demon of hatred.
Its really easy to miss becauss its an optional boss. I think?
There a lot more story from him if you give him a sake, and also bring some item like slender finger and also the malcontent ring

roma ji is 「nasu beki koto wo nasu (no desu)」
kanji and hiragana is 「為すべきことを為す」「為すべきことを成す (成すand 為す is just a little bit different ) 」, hiragana is なすべきことをなす(のです).

Honestly I’d suggest watching some of Akira Kurosawa’s films, those were a key inspiration for Sekiro. Also a nice change of pace from the now very predictable anime genre. Sometimes ya gotta go live action

"よ[yo]" can be/is added to the end of sentences to stress a point or dramatize a bit. It's hard to explain, but it's a bit like an exclamation point in English but not quite.
