    I would love to see a video that explains how the signs on the calendar work in various aspects of gardening, animal husbandry, and yes canning. I find this fascinating, as my father and grandfather did many things by this method. I wish I had learned as a child thank you for the

    Thank you for passing this information on to others. My mother always followed the signs with those same guidelines. I remember her telling about a neighbor making kraut with her daughter helping and all the kraut spoiled because it was the wrong time of the month for the daughter to have hands in the process. It was wonderful to hear you sing that old song and you sounded great! You deserve to have a very successful channel and I hope it happens! Glad you are feeling better. I had the big C the first of July and still have a lingering cough and low energy. Lots of people seem to be slow getting back to normal. May God bless your endeavors.

    Hey Justro… thanks for all your hard work to show us how to pickle your beans. It was interesting as I’ve never seen it done in a crock only heard about it. I put up cucs for pickles in a canner and that’s all the pickling I’ve ever done. I have to tell you I sure enjoyed your singing!! I’ll probably keep going back to this video just to hear you sing !     My momma wouldn't let me touch anything to be preserved when it was that time of the month, but she was very serious about when she was making sourkraut. We also planted, preserved, and went by the signs for many other things like have teeth pulled or weening a baby. I still practice these. These are things that were passed down in our family through the generations.

    My, my, my, I LOVE your rendition of that haunting mountain song!❤️ And the outdoor sounds as you snap the beans… Back door open? The churn and crock are beautiful Justin. To envy. ( The pickled beans look so good. Grape leaves are also wonderful to put up for the winter and used for Greek dolmas, stuffed grape leaves, also yummy.)

    Excellent video, Justro! My Granny Martha used to pickle green beans and corn. She knew how much I loved it and even when I was grown and living in other states ((USAF), if I visited her, she'd go to shelves at the end of her kitchen that had pretty flour sack coverings, pull 'em back and give me a quart jar. I never saw her making them, so your video was really special to me! This granny was grandpa Jack's wife (from the sled & shakes pics.) My other Grandma, Josie, who I lived next door to growing up made kraut. I remember one time she, mother, my aunt, and I were out in the yard with a big cabbage harvest, knives, kraut choppers, and crocks. As we all stood around the big work table, Grandma said, "Now, before we start, if any of you girls are having your monthly, you absolutely CANNOT help, 'cause the kraut won't "make" if you touch it!" They planted and went by the signs, too. I guess I remember that so distinctly because I was probably only about 12 yrs old and embarrassed. Keep up the good work.     Tannin is what's in the grape leaves...it's in Blackberry leaves also. Helps to keep your vegetables crisp. Really enjoyed your song. Be safe you three.

    Well, now I know what you was gonna do with those grape leaves!
    Ain't never had pickled green beans but I'm going to try it cause I already know I'm going to love them! I love quick pickled onions, cucumbers, cauliflower, cabbage, carrots and any vegetables pickled.
    You snapping those green beans brought back memories I learned from my mother. In Kentucky and Tennessee, we call it snapping beans. Love the Shelly's too! Anyway, I'll bet pickled green beans would go great combined with other companion vegetables. I'd sure like to see what your pickled green beans look like when they're ready to can.     Grape leaves have tannin in them, it helps to keep the ferment from getting mushy. :) You can use bay leaves and even oak leaves. But the grape leaves you can eat after if you want to. :D

    I have starting fermenting this year and have enjoyed doing it. Thank you for all of the extra hints. Loved the singing along with the stringing of the beans.     We call our mix pickles because we add cabbage, corn, green pepper, hot pepper to ours. Talking about good with pork chops and green beans. We also open the jar and eat right out of the jar. Good country food.

    I remember my momma making pickled beans in the churn when I was a kid. She only did this a few times, and I was too little to get all the details. I remember that the beans were absolutely DELICIOUS and I loved them! I've searched for this method for probably a decade. I cannot thank you enough for this wonderful tutorial!     Wonderful video Justro, thank you. You're a fine singer. I've fermented many fresh veggies in smaller jars without vinegar, topped with grape leaves &/or any other edible leaves I might have available. I've always wanted to try a crock method and wondered if I could ferment cooked veggies. Thanks for teaching all you do. I hope you show the final results once they're completely pickled, and I'd love to see any other pickling recipe videos. Pickled corn and beans sound so good. Onions and garlic might be yummy additions as well.

      @@metcalfmills5679 love this, I just made my first quart of sauerkraut for this year. It turned out delicious. I staggered my cabbage out to ripen at various times so I can make small batches at a time. I’d love to know your method, Justro, as I have only been making sauerkraut the last few years. It’s always nice to get a lot of opinions/methods on food preparation, often I combine various tips and techniques together. I never liked the store bought kind and didn’t know I would like sauerkraut at all until I tried fermenting some myself and finally made a successful batch. I find I absolutely love a lot of fermented foods, but not cooked or heated so it keeps all of the gut bacteria and flavor.

    I have used grape leaves for pickling cucumbers before, it is the tannic acid in the grape leaves that help keep them crisp.

    Justflo, My grandma put a leaf in bottom of pickles. My mother pickled beans in jars, left lid very loose till it worked off. I made kraut in 5 gallon buckets using same brine as you.

    As always, You are Joyful to watch and listen too. The other day , as I was listening to a video on a recipe on pickling they suggested to add grape leaves or Horseradish leaves. Because they have Tannic acid in them which causes the pickles to be firm, not soggy. I knew the grape leaves or cabbage leaves where used for a protection layer to keep air out of the brine. Didn't know what was in the pickle solution for firming up the pickles. I love hearing the Wise ways of of Elders. Had to go back to listen to your song it was interrupted by having to go get something in the other room. love your song, was that all of it or did you get interrupted by the finding of the Last Bean, Would love to hear all the words if they're more to it. Thank you ,Justro. The video with Charlotte and Penny on pickin pears was cute with (Penny doing the bumblebee dance) I wanted to send you the fruit picker from Amazon so you could finish harvesting the pears when you get back into the pears mode again.       Mr. Justro, when I was a little girl, my folks were friends of Doc Watson. Doc sang that song to me (I was maybe 5-7 years old) and I’ve never known the name of that song. I’m in my sixties now. I think you must live somewhere around Boone, or know songs that were sung around Deep Gap where the Watson family was from, maybe?

    Justro, I knew it was some kind of pickling with the grape leaves, I never used them on beans before, but we have on cucumbers. You done a fine job of preparing the beans! You're right about the full beans...Do you want green beans or green hulls? Lol! It does make a lot of since to let the beans get full, it also fills more jars up when canning! Thanks Justro for all the good information, I am glad you paid attention to details when you were growing up, It sure is helpful today and all these little nuggets of information will sure come in handy for people that are willing to listen now and in the future.     I love pickled beans and corn. I have always pickled mine in the jars because the only crock around was my moms grandmothers and she would let me use it lol. I’d like to try to do them in a crock sometime. Like always another great video keep them coming.

    Hi Justin, thank you for sharing your mother's recipe for pickled beans. I have never used grape leaves to cover my fermenting vegetables. I just use a bit of boiled white cotton cloth. Do you actually taste the grape leaves? I can my grape leaves in the spring when they are tender for use in other recipes, like dolmas. They are dry and beat up by fall. Also I don't throw out my water from cooking up vegetables for canning. I add a bit of vinegar and salt and can the hot water. Sometimes I concentrate it down first. I mix the waters with tomato juice for a nice refreshing drink.

    Howdy Justro! Had a good idea what you needed them grape leaves for. Granny always wanted the leaves from a wild fox grape if I could find them for her. Don't reckon it makes any difference though. Use to have to pickle everything if you wanted to keep it for spell. Thanks for the video brother!!

    Grape leaves have tannins in them that help fermented foods remain crunchy. They say you can use black tea bags as well since it has tannins too .

      As long as it takes for them to get how you want them. Up to 21 days but maybe only 10. We will be checking them soon

    Love watching how you pickle beans. Can you taste the vinegar when you eat them? I love pickled beans. I don’t put Vinegar in them I only put
    Water 1 gallon and 1 cup of canning and pickling salt to cover all the beans.

    I don’t think I have ever had pickled green beans. But I just finished getting a couple quarts ready for the freezer that I picked this morning. So I might pickle them instead. What was that song you were singing? I love that ❤️

    Just to how many days does it take for the beans to be through pickling? I heard you say some people let them go for 21 days. Do you just go by the taste or is there a set time for them to be ready? Thanks for sharing your pickling talents I had to watch a lot of videos before theyi found you. This is how my mom did it too. I never learned the recipe all I did was eat them. Lol. She was born in 1931 so she knew the old ways. This is great you shared your knowledge with everyone.     Honey, it’s the tannins in the grape leaves that will crisp up the beans. If someone can’t find grape leaves, you can use oak leaves or black tea. 😊

      And the black/green/oolong tea leaves are all leaves from the camelia bush just picked at different stages and/or fermented. I just pick the smaller leaves and toss a couple in.

    Here in Wisconsin we have wild grape vines that grow all over everything but I never see them put out grapes; I wonder if these could be used, or if it has to be garden fruit-producing grape vines? They look the same as my regular grapes; the japanese beetles eat them the same.

      I would think so. Grape leaves have tannins in them that helps things stay crisp.

      The wild grapes tend to be male or female. Male vines won’t produce fruit. This won’t make any difference in the leaves. So go right ahead and use them. Just be sure they’re grape leaves and not Virginia Creeper or Poison oak.

    Interesting, thank you for sharing. My grandma pickled beans but I did not like them…may have been because she used pole beans which I did not like. Prefer half runners, cornfield or greasy beans. Had no idea how she did it. Do like pickled corn and leather britches though. I fix leather britches sometimes but don’t know how to pickle corn.

    Do you save any of your seeds for the next gardening season? If you do when do you pick and how do you dry them?

      I leave them on until they are a little bit dry but not too dry because the weevils will get in them. I will talk mor on that later. You can finish them in the house or on the porch, just somewhere with good air flow
