Here at Metcalf Mills our goal is not only the preservation and education of the grain milling process, but also to help provide a service and products that help make good, healthy, fresh milled goods more available to individuals and communities. I am German = and I grew up with that type of beans= loved them.❤❤❤
Pickle beans are like Gold in these here hills ! You were taught so well. So very proud of you ! You are a walking encyclopedia of our Mtn ways. Thank you Justro !
Aw thank you so much Sherry. I hope that I can help in some way.
Love the song! I have a great love for old folk songs and mountain music. Beautiful. I could listen to u talk all day.
Aw Thank you April
That string rubber band trick is ingenious!!!!
It makes it easy
I never thought about the moon signs to affect the fermentation. Thanks for the many lessons. I just bought my first crock I'm 60 years old. I guess you're never too late to learn something new. Blessings to you and the girls.
Oh it effects everything. Bless you as well
Justin, my mama would not even go in the garden when it was her time of the month. It's so good to have some of the old ways brought back to mind.
Thank you for sharing this with us. There is more to things than people know.
I would love to see a video that explains how the signs on the calendar work in various aspects of gardening, animal husbandry, and yes canning. I find this fascinating, as my father and grandfather did many things by this method. I wish I had learned as a child thank you for the
I will try to get that done. Thank you for sharing and thank you for watching.
I would love a video on this too! I purchased a calendar but can't figure out how to read it 😟
I was just discussing last night with my husband about the “right signs” for canning and today I find your channel ‼️ Thank you, gonna try those pickled beans. They have got to be healthy for our gut, those probiotics ♥️
Thank you! So glad you enjoyed and hope it helps! ❤️
Hey Justro… thanks for all your hard work to show us how to pickle your beans. It was interesting as I’ve never seen it done in a crock only heard about it. I put up cucs for pickles in a canner and that’s all the pickling I’ve ever done. I have to tell you I sure enjoyed your singing!! I’ll probably keep going back to this video just to hear you sing ! God has blessed you with many talents!! Iam so glad I found your channel… you are a breath of fresh air in this crazy world. Praying for our Lords blessing on you and your girls !!!
Aw thank you so much Anita. I appreciate you letting me know. I hope that I can help in some way. ❤️
Tx I learned and will do this bean picking. From Fanie South Africa in the Freestate.
Hey and thank you so much!
Thank you for passing this information on to others. My mother always followed the signs with those same guidelines. I remember her telling about a neighbor making kraut with her daughter helping and all the kraut spoiled because it was the wrong time of the month for the daughter to have hands in the process. It was wonderful to hear you sing that old song and you sounded great! You deserve to have a very successful channel and I hope it happens! Glad you are feeling better. I had the big C the first of July and still have a lingering cough and low energy. Lots of people seem to be slow getting back to normal. May God bless your endeavors.
Thank you for sharing this with us Louella. I appreciate your kind words. Hope you are better soon! ❤️
It’s the tannins in those grape leaves that keep those beans nice and crisp!!
Yes
We call our mix pickles because we add cabbage, corn, green pepper, hot pepper to ours. Talking about good with pork chops and green beans. We also open the jar and eat right out of the jar. Good country food.
Howdy Anna, it sounds like it would be real good. Thank you for sharing with us. You can’t be good country food!
My momma wouldn't let me touch anything to be preserved when it was that time of the month, but she was very serious about when she was making sourkraut. We also planted, preserved, and went by the signs for many other things like have teeth pulled or weening a baby. I still practice these. These are things that were passed down in our family through the generations.
Excellent video, Justro! My Granny Martha used to pickle green beans and corn. She knew how much I loved it and even when I was grown and living in other states ((USAF), if I visited her, she'd go to shelves at the end of her kitchen that had pretty flour sack coverings, pull 'em back and give me a quart jar. I never saw her making them, so your video was really special to me! This granny was grandpa Jack's wife (from the sled & shakes pics.) My other Grandma, Josie, who I lived next door to growing up made kraut. I remember one time she, mother, my aunt, and I were out in the yard with a big cabbage harvest, knives, kraut choppers, and crocks. As we all stood around the big work table, Grandma said, "Now, before we start, if any of you girls are having your monthly, you absolutely CANNOT help, 'cause the kraut won't "make" if you touch it!" They planted and went by the signs, too. I guess I remember that so distinctly because I was probably only about 12 yrs old and embarrassed. Keep up the good work. Prayers for your health and energy. 🙏🤠❤🙏
Aw thank you so much for sharing this with us Mrs Linda❤️
Tannin is what's in the grape leaves...it's in Blackberry leaves also. Helps to keep your vegetables crisp. Really enjoyed your song. Be safe you three.
Yes, I’m going to do a fff on the very thing. Thank you. !
Sour Cherry leaves oak leaves and raspberry leaves and horse radish leaves are also good, Oh and current leaves
Well, now I know what you was gonna do with those grape leaves!
Ain't never had pickled green beans but I'm going to try it cause I already know I'm going to love them! I love quick pickled onions, cucumbers, cauliflower, cabbage, carrots and any vegetables pickled.
You snapping those green beans brought back memories I learned from my mother. In Kentucky and Tennessee, we call it snapping beans. Love the Shelly's too! Anyway, I'll bet pickled green beans would go great combined with other companion vegetables. I'd sure like to see what your pickled green beans look like when they're ready to can. Thank you Justro 🥰
I’m sure you will. Thanks for sharing!! 🙂
I pickle beans. We love um.
Never can maters during that time either.
LOVE the song💜
Thank you for sharing!❤️
I loved when you sang that ballad!
Thank you!
I remember my momma making pickled beans in the churn when I was a kid. She only did this a few times, and I was too little to get all the details. I remember that the beans were absolutely DELICIOUS and I loved them! I've searched for this method for probably a decade. I cannot thank you enough for this wonderful tutorial! Lord willing, I'll be making a batch next year!
My, my, my, I LOVE your rendition of that haunting mountain song!❤️ And the outdoor sounds as you snap the beans… Back door open? The churn and crock are beautiful Justin. To envy. ( The pickled beans look so good. Grape leaves are also wonderful to put up for the winter and used for Greek dolmas, stuffed grape leaves, also yummy.)
Thank you Deborah ❤️. Thank you for sharing this with us
Thanks for teaching me about pickling beans. Honestly, I'm not sure I'd like them, but I'll try anything once. My wife would probly love em.... Really liked hearing you sing that mountain song. I just knew you could probly carry a tune. Hope you have a restful Sunday and are able to grind out a productive week. May God bless you and your family and this great country we live in and enjoy. ❤️🇺🇲❤️
thank you Tom. I appreciate you and amen!
God bless you as well my friend❤️🇺🇸❤️
Justro you are a wealth of information and talent! I LOVED your song, I hope you teach those songs to the girls to keep passing them down to their children.
I've never pickled beans before, but will plan to do so next season. Also those crocks are AMAZING!!
Aw thank you Vanessa. Glad you enjoyed it. I hope they do well for you, please let us know
I forgot to tell you that I LOVED hearing you sing! Please, more singing whenever you feel like it. 👏🤠💜
Aw thank you Mrs Linda❤️

Aw well I can’t do that, if I did Nashville would be ah callin.. 😆

For sure Tommy. Thank you
Lookin' at all those pretty green beans sure makes me want some "leather britches"....my Mamaw used to make them when I was little... I've not had them in so long

Enjoyed the video. Thanks for sharing 🙏 😎 🏖 🏝
Thank you Nancy
I don't know that I've ever had pickled beans. But, this sure does look good! I learn a whole lot by watching you pickle/can things. You've got a way of making it make sense. God bless you and thank you for sharing this with us.
I am glad that you enjoy. Thank you and God bless you as well
I really enjoy watching you, and learning new things!
Howdy Susan, I appreciate you and I hope it is a blessing

That looks good. I've never heard of pickled beans before. Thanks for sharing this
They are very good
Thank you for this Great video! I use to love my grandmas pickled succotash made with corn and Lima beans. I’m so impressed with your knowledge! You do such a fine job of explaining all the processes. Your beans look delicious 😋.
I am glad I can share. Thank you 🙂
You sure are a hard worker. Nice job Justro.
I try to stay busy. Thank you
Wish I lived closer to you I sure would get me some pickle beans cause I love them.
Thank you Mary
Just watched this video and wondered what happened to sweet William. Love to hear you sing reminds me of my mom.
Thank you for sharing
I had no idea the calendar included signs of body parts lol. I would love to learn more about what that’s about
I will share more later. Thank you!
Best Video ever...Love Love Loved it.
Glad you enjoyed!
Awesome! My grandparents pickled bean, corn, and cabbage. I didn’t know how they did it. Thanks for the memories. 💙💛🙏
Glad you enjoyed !
Grape leaves have tannin in them, it helps to keep the ferment from getting mushy. :) You can use bay leaves and even oak leaves. But the grape leaves you can eat after if you want to. :D
Yes, thank you for sharing this with us.
It's interesting watching different folks videos. Appalachian living, down south living, and even Cajun living... us southerners are a lot closer kin than we all realize. I think we all got some family that came through those hills. I know mine did.
I don’t doubt that. I am sure that we are. Thank you CR
Thank you. You answered some questions I had concerning pickling , I did a jar of refrigerator pickles, and they turned out delicious. But now I know I can dot it for long-term storage. 😊
I have starting fermenting this year and have enjoyed doing it. Thank you for all of the extra hints. Loved the singing along with the stringing of the beans. Virginia and Charlotte are two lucky little girls to have you as their father. Pass all this on to them. As an ole woman I remember all the little tidbits passed on to me by my mom and grandmother. God bless you Justro
Aww Thank you so much. God bless you as well
Lol that sad/scary song love it
Aw thank you
I've pickled things on my period before with zero issues. That's an old wives' tale.
Hey brother enjoyed the video. I always like the old ways of doing things. All my older family are are gone to be with the lord. And I am trying my first gardening in raised beds because I am limited on space. And enjoyed watching. God bless you and the girls. Always in my prayers
Aw I am so glad that you enjoy. I hope that it all does well for you. God bless you as well. Thank you ❤️
Great video! I always used to make a mixture of cabbage, beans and corn. It was so delicious.
Howdy Paula, thank you for sharing and for watching
Thanks for such a peaceful video.
Glad you enjoyed
Old ways are the best ways
Yes, thank you
Thank you Justro.
Thank you
Honey, it’s the tannins in the grape leaves that will crisp up the beans. If someone can’t find grape leaves, you can use oak leaves or black tea. 😊
Yes thank you🙂
And the black/green/oolong tea leaves are all leaves from the camelia bush just picked at different stages and/or fermented. I just pick the smaller leaves and toss a couple in.
Looks like you got a lot of good eats there. The grape leaves remind me of the grape leaf pickles my mom used to make. They were so good.
Aw thank you for sharing
Love your channel! Your knowledge is priceless. Thanks for sharing!
I appreciate you. Hope it helps!
Love pickled beans and kraut . Good stuff, keep up the good work!
Thank you Lynn
Thank you, Justro. I love the grape leaves part. You got a nice smile and I liked the video. God bless!
Thank you for watching, glad you enjoyed! God bless you as well
Eating this type of food is essential for good health. You did an excellent job.I picked up many things I didn't know.Thank you.
Thanks Maria, glad you enjoyed
I would love it if you would make a cookbook.
Well I will try to one day. Thank you so much CM
This is a great video on how to pickle beans, by the way they look yummy too! I have never pickled beans before so this was very informative! Thank you so much for sharing with us!
I have used grape leaves for pickling cucumbers before, it is the tannic acid in the grape leaves that help keep them crisp.
Thank you so much! I am glad you enjoy. Yes that is what it is
Wonderful video Justro, thank you. You're a fine singer. I've fermented many fresh veggies in smaller jars without vinegar, topped with grape leaves &/or any other edible leaves I might have available. I've always wanted to try a crock method and wondered if I could ferment cooked veggies. Thanks for teaching all you do. I hope you show the final results once they're completely pickled, and I'd love to see any other pickling recipe videos. Pickled corn and beans sound so good. Onions and garlic might be yummy additions as well.
Thank you for sharing this with us. I absolutely will
You're right on that.
Can't judge the mare as rebellious, cause the girl weren't told.
Thank you
Loved the video
From Old yankee granny. God bless
Glad you enjoyed! Thank you and God bless you as well
This was a joy to watch. Thank you for sharing. Love the towel you used to cover the crock
Aw thank you Cindy
You are great.
Thank you, I am glad you enjoy
You're making me hungry!
😆
hey Justin. always good and a learning experience every time. question: could you show us one day how to make old timey kraut? enjoyed this one and look forward to the next one. thanks!
Thank you David. I sure will, I was planning on it
@@metcalfmills5679 love this, I just made my first quart of sauerkraut for this year. It turned out delicious. I staggered my cabbage out to ripen at various times so I can make small batches at a time. I’d love to know your method, Justro, as I have only been making sauerkraut the last few years. It’s always nice to get a lot of opinions/methods on food preparation, often I combine various tips and techniques together. I never liked the store bought kind and didn’t know I would like sauerkraut at all until I tried fermenting some myself and finally made a successful batch. I find I absolutely love a lot of fermented foods, but not cooked or heated so it keeps all of the gut bacteria and flavor.
@@tagladyify absolutely!
Thank you for sharing this with us Tracy! That is for sure!
Thank you.
Thank you
Those shelled beans reminded me of Mom's pasta e fagioli ( Italian for pasta and beans) waiting for our beans to get bigger to make some, beautiful harvest of beans, hope Charlotte is feeling better❤️
Thank you for sharing this with us. She sure is❤️
I’d love to see the final product and also the pickled beans and corn
Thanks for this video
Your girls are lovely!
Thank you, I will do my best to share that.
I love this recipe Justro. I hope they come out delicious. I can't wait to see more. I'm doing some kraut. And try some other stuff. Today raining cats and dogs I found some squash in the fridge dont have pie crust so I guess I'm making a trip to the store. I'm sure your cooking going to make me fat. Be safe we love uns . Your a blessing.
Ahh ha ha. Love uns too ❤️
I love pickled beans and corn. I have always pickled mine in the jars because the only crock around was my moms grandmothers and she would let me use it lol. I’d like to try to do them in a crock sometime. Like always another great video keep them coming.
Aw thank you for sharing Danny. I appreciate you
I really like the pickled beans, but its been a while since I've eaten any, your demonstration makes me crave some soon.Something else I also enjoyed in today's video was that good singing Justro, another one of your hidden talents. Have a Good Holiday and Take Care Metcalf Family 🙂.
Aw thank you so much Donald. Glad you enjoyed it and hope you do as well
Justflo, My grandma put a leaf in bottom of pickles. My mother pickled beans in jars, left lid very loose till it worked off. I made kraut in 5 gallon buckets using same brine as you.
Thanks for sharing Walpo. My mother made kraut in jars same way
Love this so much! Thank you!
Thank you Crystal
Hello Justro, neat to watch.
I can't pick beans, BUT i sure make a killer 5 bean salad.
Hope Little one is feeling her self. 🦄
Aw you could if you had some. Thank you🙂
Used to love Shelly bean's! But I didn't like shelling them as a kid! My aunt wood bring bags and bags of them to my mom!
Thank you for sharing Jeffrey
Thanks for sharing this Justin, I hope Char is feeling better!
She sure is, thank you Thomas
A very thorough, entertaining and informative presentation. Thank you!
Thank you, glad you enjoyed!
Howdy Justro- you’re a right smart young man. My wife uses the leaves off of muscadines in her pickling. Them gonna be awful good come winter. Take care and God bless y’all
Howdy brother, thank you for the compliment and thank you for sharing. Thanks sure will, God bless you as well my friend
As always, You are Joyful to watch and listen too. The other day , as I was listening to a video on a recipe on pickling they suggested to add grape leaves or Horseradish leaves. Because they have Tannic acid in them which causes the pickles to be firm, not soggy. I knew the grape leaves or cabbage leaves where used for a protection layer to keep air out of the brine. Didn't know what was in the pickle solution for firming up the pickles. I love hearing the Wise ways of of Elders. Had to go back to listen to your song it was interrupted by having to go get something in the other room. love your song, was that all of it or did you get interrupted by the finding of the Last Bean, Would love to hear all the words if they're more to it. Thank you ,Justro. The video with Charlotte and Penny on pickin pears was cute with (Penny doing the bumblebee dance) I wanted to send you the fruit picker from Amazon so you could finish harvesting the pears when you get back into the pears mode again. Children and Pets are precious GIFTS from OUR HEAVENLY FATHER!.
Nope that is all of it. Thank you for sharing and for watching
who in the world ever figured out to add grape leaves or any other kind of leaves for that purpose? this is ancient wisdom passed along and along down to us......if only we don't forget it
@@codyjarman I would like to know
Mr. Justro, when I was a little girl, my folks were friends of Doc Watson. Doc sang that song to me (I was maybe 5-7 years old) and I’ve never known the name of that song. I’m in my sixties now. I think you must live somewhere around Boone, or know songs that were sung around Deep Gap where the Watson family was from, maybe?
I really appreciate your knowledge of the old ways.
Bless you and your family.
@@rosezingleman5007 thank you. It has been sung in Madison County for a long time. Carried here no doubt. Thank you
A whole lot of great tips in this video! Thanks Justro.
Thank you Tracy

Love going there too! I get some of my garden seeds from there. Turnip and Purple hull peas. Tell me...what green beans does good in our area? well in Roco....I sowed some Kentucky wonders...aint havin no luck!
Really enjoyed this on pickling man, just found your Metcalf Mills! Gonna be watching more of your stuff for sure!
Aw thank you so much! Glad you are here. Hope you enjoy
Justro, I knew it was some kind of pickling with the grape leaves, I never used them on beans before, but we have on cucumbers. You done a fine job of preparing the beans! You're right about the full beans...Do you want green beans or green hulls? Lol! It does make a lot of since to let the beans get full, it also fills more jars up when canning! Thanks Justro for all the good information, I am glad you paid attention to details when you were growing up, It sure is helpful today and all these little nuggets of information will sure come in handy for people that are willing to listen now and in the future. There lives may depend on growing and preserving food! Sure am glad I found your channel! Blessing to You and the Girls! Hope Charlotte is feeling better!
Thank you for your compliments. I am thankful for what I have learned. We are glad you’re here. Thank you and bless you as well
Grape leaves have tannin which helps keep the veg crunchy. Awesome video.
Yes, that will be on fff soon
I haven’t grown green beans much. Usually I grow drying beans like chickpeas, pinto or fava or other type of Lima beans. This year I grew Jacob’s Cattle beans for chili. They are super pretty beans, brown and white splotches like a cow. I like dried beans cause they store so nicely, but you are tempting me to try your pickling method so next season, Lord willing, I may just have to grow some green beans, too. Lol. You sure have a nice big crock for it!
Thank you Tracy. Thank you for sharing and I hope it works good for you.
Beans didn’t do well this year for me. I got about two hands full and that’s it. Must’ve planted at least 20 beans. All came up but the drought eventually got them all. I planted all of them next to the corn.
Never tried pickled green beans, pickled any kind of beans for that matter. But I had never had pickled okra until 2 years ago and I loved them.
I’m tryin to like more vegetables, not just corn, peas and carrots. Growing them yourself increases my desire to eat them. But the smell of sauerkraut makes me feel sick to my stomach. Same for beans and ham soup.
Thank you for sharing. Maybe that will change for you
Never mind my question.
I found the answer.
"Fair Margaret and Sweet William"
Song by Dirk Powell, John Herrmann, and Tim O'Brien
Here it is known as Little Margaret. Thank you
Thank you so much for sharing this knowledge Justro…
Glad that I can. Thank you Andy
I miss PAPPAW s pickled beans and corn he would do it in 3 50 gal barrels
Thank you for sharing this with us
Grape leaves good for canning but horseradish root or sour cherry leaves do the same things. You can cooks summer bean soup with the shelled beans, just add a soup vegetables cook well , make a light thickening to the soup and add a good tablespoon sour cream on the top.
Thank you for sharing this with us!
I love to pickle beans with dill and garlic. Good instructional video.
Thanks folks!
Grape leaves have tannins in them that help fermented foods remain crunchy. They say you can use black tea bags as well since it has tannins too .
Thank you for sharing this with us.
Great video bud. One thing I don’t miss is destringing beans. I always plant non-string varieties lol.
Thanks for sharing this with us big country. Are you in NC?
No sir, I’m in Clinton, SC. About 2 hours from your neck of the woods.
I have learned something, about covering the bowl.
I hope it helps
Been trying to make pickled beans but my dad says they don’t taste the same as when he was a kid. His kin was from WV so maybe I’ll try this recipe and see what he thinks :) thank you for the video. God bless
Aw I hope it is just right. Thank you❤️
Lots of good information, singing, beautiful beans, and mountain know how! Thanks for everything you do, Justro! Trying to catch up when I can, internet problems lately
Thank you!
Howdy Justro! Had a good idea what you needed them grape leaves for. Granny always wanted the leaves from a wild fox grape if I could find them for her. Don't reckon it makes any difference though. Use to have to pickle everything if you wanted to keep it for spell. Thanks for the video brother!!
Thank you so much for sharing Rick!
My Mom and Dad did everything by the sign from canning to roofing and I do the same when I plant or roof
Yes for sure. I will talk more about that later. Thank you
Hi Justin, thank you for sharing your mother's recipe for pickled beans. I have never used grape leaves to cover my fermenting vegetables. I just use a bit of boiled white cotton cloth. Do you actually taste the grape leaves? I can my grape leaves in the spring when they are tender for use in other recipes, like dolmas. They are dry and beat up by fall. Also I don't throw out my water from cooking up vegetables for canning. I add a bit of vinegar and salt and can the hot water. Sometimes I concentrate it down first. I mix the waters with tomato juice for a nice refreshing drink.
