    Bro, I don't think the reason is they cannot afford it. The old people choose to remain eco-friendly and more into sustainable development. Those old stone grinders are more sustainable rather than using the modern-day grinders which are made out of plastic and run on electricity. Also, those plates made out of leaves (which are widely used in South-Asian countries) are easily degradable. 0% harm to the environment. About the Newari platter, you also made me curious about why it is served cold😅. Maybe it's because back then they only used to cook two times a day. As there was no gas and electricity, they used firewood as we could see them using still now. And it's a very tedious job to burn the firewood unlike today's instant stove or whatever we are using. So maybe that's how they continued to serve us cold But I guess now we can heat it🙂

    I'll explain why we make two different end shapes on the Yomaris. As you know, there are two fillings. So each filling yomari has its own unique end shape. Both kinds of yomaris are put together inside the same steamer, so it is easier to distinguish which is which when they have two distinct forms.

    Fair judgment haha. I grew up with these food, so i absolutely love it ! Even my friends who are not Newars have hard time getting used to these. Most of these are acquired taste!

    Really enjoyed your video but I must say as a Nepalese, life in Nepal is not hard/harsh. Yes, the corruption is there, infrastructures isn’t up to the mark, and our economy does rely on tourism but life in Nepal is laid back. One member can sustain the family of 4,5 and most of us have roof on our head, food on our plate. We do not spend our life paying mortgage or taxes working 9-5 like a robot. People have free time to enjoy life and most of us doesn’t count happiness on the basis of materialistic things.

      I agree! As a Nepali Australian, I am going back to Nepal with one way ticket on 6 Dec with Nrn visa to Nepal. I love Australia but there is an emptiness I have been feeling for the last few years. I wanna live at this point in my life where I will know who my neighbour is 😅, I can eat authentic foods, wake up with people talking to each other n of course my family.

    Nice video and liked it. Wanted to comment on few thing so here we go.
    A lot of people in the video could easily afford a electric grinder but they chose to do it traditionally because they feel comfortable with it as they have been doing for over 50-60+ years of their lives. As for lungs and sahpu mhicha, these are super traditional food and even a Newar teenager will find it alien and difficult to eat it. And yes, it’s not always appetising to see how food are prepared or how the food looks before they are cooked. All the food you were served are cold because those are snacks (khaja) rather than main course, and many mains and soups too are served cold such as paun kwa. They all are cooked well but left to rest until they return to room temperature before serving. It’s the way they are served, like sushi or tartare are served cold.
    Very nice informative videos. Keep going.

    Looks like perhaps this has been somewhat of a difficult episode to edit and post due to the current living conditions as you pointed out. Yet, in keeping with your positive spirit , you showed respect and philanthropy by supporting the locals while sharing the unique Kokana foods and culture. Appears Nepal is still rebuilding from the 2015 earthquake followed by the Covid pandemic .

    Beaten rice is eaten extensively in India and is called Poha when moistened with water when washed and sauteed with vegetables . It is called 'chivda' when dry. Dry one can be made into a snack when fried in oil and mixed with spices, peanuts, green chilies and roasted grams. It is eaten Maharashtra, Madhya Pradesh, Gujarat, Karnataka, Orissa, West Bengal, Eastern UP, Bihar and many other places. It is eaten mixed with yogurt or fresh curds, with jaggary, with milk and sugar. I am surprised Luke never saw or even heard about it while travelling in India !

    you can mix the soup in that bowl in baji (beaten rice), if you think beaten rice is too dry. We normally do that in our feast, especially with meat soup.

    The 'Ala ' local newari alcohol makes your body really warm from inside so in order to balance the body temperature the newari set is served in a regular temperature.

    Chaku is not only jaggery, it is made by mixing jaggery in boiling milk, after 15/20 minutes ko boiling process it becomes chaku .

    When I was in Nepal we would see the Sherpas put their hands in the fire. We called it Sherpa hands. The houses in the Kumbu region had no smokestacks and we would sit in the smoke too. Like expectancy was in the 40’s for people who lived in these conditions. That was 50 years ago. I had hoped it had changed by now.

    Luke, beaten rice is eaten in India. Usually they are thouroughly washed in fresh water and after tadka, onions fried, with peas and sweetcorn or any vegetable of your choice is added and cooked, roasted peanuts, salt and sugar, washed beaten rice is added and thouroughly mixed. Grated coconut is added, lime/lemon juice added to your taste. Switch off flame. This is eaten as tiffin.
    The only time raw beaten rice is eaten is when powdered jaggery, grated coconut, ground cardomom, and mashed ripe bananas are all mixed together.

    So, the reason why the food is served room temperature or "cold", is that these dishes are usually prepared earlier in the day/previous night, for occasions/festivities; and guests (as per custom) visit throughout the day (at different times throughout a day, or maybe two/three days), usually per their own convenience, as this is how multiple family interminglings/visits per occasion can be made possible during festivities/occasions. The food is meant to be prepared for this! It is meant to be non perishable for multiple days. I mean who's gonna eat all those leftovers 😂🤣!
    Family and societal ties are usually much larger and close-nit than the western/industrialized nation's standards. This is probably how food was kept and prepared for feasts before refrigeration had arrived around the world, as well. The Nepalese people have really appreciated/popularized these styles of presevered newari dishes throughout the country, and some of these dishes are staples/favorites.

    Chhoila is cold because it is supposed to be eaten long after its prepared. Its prepared in home and then taken to farms where people eat lunch during lunch break. Its spicy and cold to preserve it from going bad during transportation.

    Fire stove is rare already, for obvious reasons. But i really miss fire cooking at my grandparents' when i was little. I would expect traditional food served in brass plates.

    Beaten rice is known as "Chire" Or "Chura" in Bengal and Bihar (In India). Also may be found in Bangladesh.

    Luke, your "authencity" and "dollars" spent are both appreciated. However, please be mindful of using terms like "rough" and using your own biases to judge these people. What you value as the markers of happiness and contentment in America may not be what Nepalese or other people around the world value. Nepalese are generally very happy and positive people who value close relationships and community enrichment relying heavily on one another. They mayn't be rich in $$ but they are rich and content in other ways. They probably don't consider their lives to be as "rough" as you make it sound to be honest. Additionally, gas stoves, modern sewing machines etc are all commonly used( especially in the cities ) and therefore, they do have a choice to use the alternatives. Traditional ways of doing things are being preserved in some of the villages like this one and that is beautiful to me.
    Just remember one thing - there are many different ways to be human in this world and your way is not always the right way. :)

    the two dishes that you were regretting, Swonpuka and Sappumhicha are my favourites so I was a little offended but I understand that tastes are subjective. Also, I appreciate the effort to actually go with a newa family and show authentic newa culture and not just go to a newa restaurant and call it a day

    that samay baji is eaten cold. only hot thing with it is boiled meat which is not included in it. Samay baji is more flavourful when eaten cold.

    It's not the correct word (rough) and (tough) life which you are describing they are doing that way from very long time and it doesn't mean they are not aware of modern world.They know lot more then your expectation which you can see in their food.Its a tradition which that special cast is still following which I always love to see.Enjoy your trip with lovely people and their food.
