Eating outside at Lavo at Palazzo is phenomenal. Top of the strat is hard to beat but if you want to be outside/weather is good/you want to be RIGHT on the strip, that's a great upscale place
I'd recommend Aria Studio Panoramic Suite. Jetted tub that can hold two people, had a great panoramic view of the Strip, airport, and the mountains. Was a great view to wake up to every morning. One thing I would probably suggest, a limo pickup. I see specials for $100 or less online for them. That should set the mood for the entire trip 😉

I like the nightlife recommendations. Very sensible considering the man is probably covering 90% of the expenses, and tables/sections are pricey for one person to be responsible for.
I love all of the restaurants and hotels you've mentioned. Been to each several times. A few more that are amazing are: Food-Joel Robuchon (the only 3 michelin star restaurant in Vegas.. and very impressive), Picasso and Hell's Kitchen Hotels- Aria Sky Suites and MGM Skylofts Also.. as great as Prime is at Bellagio.. Gordon Ramsay's Steak may be more impressive since the menu has more variety than other upscale steakhouses
Wife and I often stay at the palazzo (on cheaper weeks). Upgrade to the prestige club!!! A must! And for romantic eats, Oscars at the Plaza. Morimotos is highly solid at MGM. And Brunch at Bouchon in the Venetian is a win. Even Eataly is a blast for couples at Park MGM. But hit the booths not the restaurant.

As always the list is a great one, only one complaint from me . Top of the world is the worst fine dining experience that I've had in Las Vegas🏪🤢🤢🤮🤮 I could never recommend it to anyone !! I'm about to go back to Las Vegas in October and my cousins and I are celebrating my 🎂🥳🎉 . I decided to make a reservation at CATCH. So I'm super happy that you said that it is fire 🔥🔥🔥. U right bruh....I live in LA and twice a year I hit up Aria...panoramic and strip corner suites...limo pickup from the airport thru Aria is $80.....
