Im not too sure about the salad, but maybe its meant to be cold and it dilutes the amount of sugar she added? And as for the steamed squid, its not gutted beforehand as it has eggs inside!

What does squid taste like?
To me, it has a very mild savory taste and it’s appeal mostly comes from its springy and chewy texture. It’s really good and if you ever see it on a menu I highly recommend trying it out!
