I only cook my salmon with teriyaki sauce but this hollandaise has me intrigued. My side is always rice. Sometimes I'll add spicy green beans as a second side. But the rice is a must for me.
I'll be honest, I think the best way to cook fish is so much simpler. This feels like the automatic way of cooking fish for someone who cooks meet a lot, fish doesn't need butter, it's hecka buttery. Best way is (please try this): step 1) descale step 2) put a bit of oil in the pan and set it to a high heat step 3) put the fish in, skin side down step 4) turn it on it's side or top depending on the shape of fish to finish cooking it all the way through. That's it, that's all you got to do. Make sure not to leave your fish sitting in the oil with the skin facing down or it'll lose the crunch. Cook some potatos, you can bask them in butter, salt and whatever if you like. Salmon has such a great taste on it's own that meat eaters rarely realise it's on it's best behaviour simply cooked. Also I wouldn't move it to the oven for a couple reasons. 1) it's more work so why bother, pan frying is so quick and 2) you're very likely going to overcook it. Fresh fish always comes apart nicely, it's not the mark of a nicely cooked fish, when you chew salmon it shouldn't be chewy, it should melt in your mouth, which rarely comes from oven cooking with no metal foil.

I was looking for some good salmon dishes for my birthday dinner tonight, but UK's in a different time zone and this video came out much later otherwise I would definitely go for this. Will follow this recipe next time for sure!
425° preheated oven. Oil and season. 18 minutes on a parchment lined dish and never fail. Perfect texture every time. You can then dry the bottom and lay in a preheated skillet for crisp skin if you plan to eat the skin.
18 minutes sounds overcooked..i cook it in the oven at 425 as well but only for about 10 mins max. and yes this would be for a fairly large piece of fish.
May be blasphemy but if you don't like the skin in any capacity (like myself). Do 425 on tinfoil do less time. Like 13 minutes. The skin sticks to the foil.
Why do you add so much oil and butter?? Salmon is one of the fattiest fish out there it doesnt need that. Also the best spices for salmon that I use are just salt, lemon pepper and dill, and don't slip your salmon, keep it on skin side down and put lid on it or put it into oven so it won't dry out that much. If you really want to experiment salmon at it's best, grave it or smoke it!
the oil is because they thought cooking fish in stainless is a good idea? i honestly have no idea why they cooked in stainless but you need tons of oil if you dont want it stuck on it. the butter because of flavor i assume. im with you on this tho, salmon in my opinion is best served with salt and pepper, nothing else comes even close for me
Looks great . I prefer a lighter sauce to preserve and enhance the flavors of the fish. Great technique with the skin side down first then finish in the oven
Teriyaki Sauce or just Ponzu on Salmon is so incredibly good, I've never tried hollandaise sauce so I guess I'll have to try that one day. For the salmon, I wouldn't butter baste it. Salmon is fatty and you don't need butter to add any extra flavor. Also, I wouldn't put it in the oven, you can easily overcook it in the oven. Pan Frying is much easier. Fry on the skin for 90% of the cooking time and then flip it over. There should still be a slight raw pink in the center. Otherwise it ends up completely cooked through and dry, it sorta looks like that is what happened at 2:38 but no doubt that still looks juicy.
I'm with him until he puts that giant knob of butter. You're not going to taste the salmon fat with all that butter. And I really doubt he made that hollandaise with the pan dripping full of salmon flavor. Gods knows why chef wants to cover expensive salmon flavor with inexpensive butter.
Yeah. We use less butter with a large salmon fillet when cooking it in the oven. He's out so much with this salmon that it defeats the purpose of using salmon. Use a mildly flavored fish instead, not a fish that's already so good on its own.

Also, I wouldn't have pasted the salmon skin to keep it crispy. Similarly, I would have plate it so the sauce will be on the bottom, then salmon skin up to keep it crisp.

Guys, just a tip: Don't put your hands on salmon like they did, because it makes easier to some drop of hot oil that is "jumping out" the pan spills on you. By doing what they did, it easier to get burned.
Never tried basting mine when I cooked savory salmon going to have to mix it up. I tend to do a poppy seed dressing w/kale and craisins salad, honey/ hoisin salmon and wild rice 😚👌. I do miss savory though.

Pretty common in Europe i think? Had my salmon served with hollandaise or bearnaise in a couple of restaurants. Works great.

Chef tip; anything with skin that is crunchy is served skin side up, and sauce is not poured onto the skin.

Remember if you ever over cooked something, throw a sauce on it.(sauce usual have a fat and fat retains moisture)
