    This guy, Bobby Flay, Emeril Lagasse, Sara Moulton, Ming Tsai, and all of the Iron Chefs are what inspired me to learn about real cooking. a decade and a half later, here i am in culinary school, pursuing something i never thought i would be able to do. really brings me back man, awesome upload

      That's why Food Network was awesome back in the day where there were a few cooking competition shows and more teaching cooking shows. Ah, those were the days.

      @@erichenderson6515 All those Food Network contests, using impossible collections of ingredients, have gotten really old. Hasn't anyone at the Network got any original ideas? It would appear not. Back in 1996, that show with Nina Griscom and Alan...(food critic for Esquire) was a fun show; reviews mostly of NY restaurants. Gone, of course. And nothing similar to replace it.

    I almost forgot about this show altogether. Thank you SO much for uploading these. I’ve been binge watching these all day. This is the era of Food Network that inspired me when I was really young to get in the kitchen and experiment with new ingredients and flavors.

    Few years ago I watched every single show and learned so much from Mario. My cockatiel learned to whistle the molto mario theme. Love these thanks for sharing.

      It seems to like taking jabs whenever he can at the french way of cooking lol it must be an Italian french beef, those two are the power punchers of the cooking world

    Mario is right about throwing out the spices. I finally learned some spice cabinet management when I developed interest in Indian cooking. I date my spices, only keep ground spices that I use a lot (or keep a tiny one ounce jar of certain things like cloves and allspice.) I keep mostly whole spices and grind them as I use them and yes, after six months any ground spices unused get binned. The only exception is my treasured NM hot chile powder which I have to get when I visit and then it is a large bag that is stored double bagged in the freezer.

    Mario had a TV show before this about Spain. Does anyone have copies of that? I think it was an excellent series too.

    I'm a huge fan of cheese, but Mario is real heavy-handed with it hahaha. Still respect the craft, though.
