  • This second part of my Christmas Cake 2016 is putting the marzipan layer onto the cake. The video is short, and a messed up a little as I had a camera problem. But you can see how it is done, with a further explanation at the end.

    Can I make marzipan at home?.Do you have a recipe of homemade marzipan?

      Hi Tom, thanks for subscribing. This is a lovely cake and it is quite easy to make. Covering with Marzipan can be a bit tricky, but it doesn't matter if you patch it as it will eventually be covered with the Royal Icing. I hope you enjoy making it and then eating it too.

    Hi Geoff, thanks for your videos. Im enjoying them.
    Can you pl help me with my difficulties in cake making? 1) the curdling effect after adding eggs+1tsp flour. 2) the fruit tends to sink down to the bottom if the cake while making... thanks

      Hi Lucio Bos. I hope I can help. It is common for the mixture to curdle when adding eggs. Adding them one at a time and mixing slowly helps to avoid curdling. Adding a little flour also helps. But really it doesn't matter too much as when the remaining flour is mixed in everything will come together ok. As for fruit sinking that is fairly common as the weight of the fruit is often much more than the batter which is trying to suspend it. To help with this you can chop larger fruit into smaller pieces. You can also coat the fruit in a couple of table spoons of flour before mixing into the batter. The flour will help prevent sinking.

    Great videos. You speak nice and slow which makes it easy to follow. I just wondered if there's a difference between golden and white marzipan? I accidentally bought white, could i still use it for xmas cake?

      Hi Kim, thanks very much. There really isn't any difference between white and golden marzipan. White is usually used to colour when decorating cakes etc, whereas the golden one is usually used for things like Christmas cake. The flavour will be the same and it will behave exactly the same as golden, so it is fine to use it.

      Hi. Yes, happily the cake is still intact. Hopefully the icing stage will go smoothly, with no messing up, as I cant undo it and start again. That is the problem with multi-part recipes I suppose. There may be a lesson or two there. One would be to do single videos only, the second might be to pay more attention to the cameras.

      @@geoffsbakingblog I've had it in the oven now for 3 hours, just checked but I think mine needs about another 1/2 hour. The smell is so delicious and it's looking like it's coming along nicely. Can't wait for Christmas to taste it. The family are all agog. Thanks again :)
