Sheet Pan Cauliflower, Black Bean, Mushroom & Walnut Tacos

  • This vegan, oil-free, simple, spicy, and flavorful taco filling is versatile and can be personalized. I make it with the ingredients listed, but It can be made with just cauliflower and black beans. From this recipe my husband and I had tacos for dinner, and then again 5 nights later. The filling could be used for enchiladas, or chopped a bit more to fill taquitos. Or the star ingredient on a taco salad, either cold or heated.
    Quick, easy, and delicious!

    Your video came up in my feed and I’m so happy I clicked on it. The way you showed us everything right down to the kind of beans, olives, etc. you used in this recipe kept me interested and watching. I loved your attention to detail, and how you moved in close to the camera to make sure we could see everything. Loved your mishaps too, I.e., dropping the mushroom, cauliflower, etc., because that’s me all the way in the kitchen. Let’s me know you don’t have to be an expert in how you handle the food, just get the job done. I’m now a new subscriber. Thanks for sharing, and did I say the food looked super delicious 😋

      It works great pulsing the ingredients in the processor, making the pieces uniformly smaller, it only took 20 minutes to cook. Loved it !

    I use cauliflower in my Indian themed stews. Never thought to put it with black beans and mushrooms! (And a smattering of walnuts.) I must try this combo! Thanks, dear Ms. Nan.

    This looks great but I cant find those sauces here. Ilive in Georgetown, TX trader Joes is 55 minutes away in Austin. I do not go there very often, also cannot find those taco shells here or in Austin but buy corn ones-just regular in our HEb store. I will look in Natural Grocers for a sauce.

      Hi Carol, in Texas you will find lots of great hot sauces. The brand of those and the tortillas are not that important. Use what you like and yours will be just as good. The part that is important is how much whole food plant-based ingredients goes into this. I hope you enjoy them as much as I do. Thanks for writing.🌻🥰🌻

      Great question Sandra-
      1. Whole food plant food is my preference. I don’t add oils, but prefer whole food fat like avocados.
      2. Coconut oil is concentrated calories
      3. Coconut oil is a saturated fat
