The Cilantro Crema is AMAZING! Love these inspired taco recipies. Made the double tacos last night. We are 6 months into 100% plant-based and it's recipies like these that keep us that way. We miss NOTHING of our old diet. When non-vegans ask us (as they always do) "What the heck do you eat now?" we'll describe these tacos and the many other wonderful things you've taught us to make.
Made the Crispy Cauliflower Tacos with Jicama-Carrot Slaw... this was a religious experience... I think that was the best thing I have ever put in my mouth... absolutely astounding flavor and texture combination. This is a must make. Thank you so much for sharing.
I made that one tonight. So good! I didn't have jicama so I used a beet instead. I partially cooked the beet and then cut it into matchsticks. Delicious.
I made your cilantro crema and put it with your meat from your crunchy wrap included this with your corn salad and it was mind blowing. I'm eating it now and am thoroughly amazed how something that isn't meat tastes juuuust like it. You're making it easy to go vegan.
Made the cauliflower and the double wrapped tacos tonight, WOW!!! My sister and I prepared them for my mom for her birthday, and she was complimenting the food the whole meal. Said it was the most satisfying meal she'd had in ages. Nice I make my own tortillas everyday with quinoa flour, spelt or amaranth flour. Wow it's been 7 years since I've used a microwave. & soak my black beans or chickpeas over night so I can make my own refried beans much better then canned . & my garden I pick fresh vegetables and fruits so I don't have to go out to the stores

I made the Vegan Ceviche. It is amazing! I diced 1/2 avocado and added it to 1/2 the ceviche and ate it with chips. Today, I am eating it for lunch with smashed avocado topped with ceviche!

As Mexican, I need to say I loved all the creative ways you use our ingredients. In Mexico street tacos are usually served with a double soft corn tortilla,and we call that 'copia' (a photocopy), so it was very creative for you to get tacos with Copia from different kinds of shells, even though we don't really use hard shells, the tacos look pretty good!🎉🎉🎉🎉
Just made the cauliflower tacos using Red Hots Buffalo sauce in lieu of hot sauce. This is by far my favorite vegan taco so far! The sweetness of the dates in the jicama slaw bring the best balance to the recipe. Next time I’ll add more. I’m so glad I bought a big cauliflower so I get to enjoy this all week!

I’ve never wanted tacos more than I do now, not even when I was in Austin 🤩 they all look so good especially the cauliflower one. My mom loved using jicama in many of her Vietnamese recipes. I can’t wait to try them in tacos 🤤

Made the cauliflower tacos tonight...so with my 24 year old daughter and my 21 year old son still living at home, you would think I would know better than to assume I would still have hemp seeds in the cupboard...nope, had to substitute sunflower seeds. Cilantro was on sale at my local grocer, so you guessed it, they were out of stock, so I had to use parsley. No jicama either so I used turnup (because it kind of looks like jicama 🤣🤣🤣) this, still, has to be one of the best tacos I've ever eaten, and everyone loved it. Thanks Nisha, once again for saving the day ❣️❣️

I didn’t think I have such a “baby mouth” but I didn’t add jalapeño to the slaw or the cilantro crema and still found things to be spicy (in a good way). Love, love, love this recipe!!!! I think the addition of the hemp hearts to the Cilantro Crema is terrific because it adds a significant source of protein. Thank you!
The first two double layered tacos were the bomb! Me and my wife loved them and oh by the way I used your black bean recipe. This one will be thrown into our rotation. I was skeptical of the cauliflower tacos but when I made them oh my goodness it was awesome I really loved them. OMG I love the “bowl inside a bowl” technique for shaving the corncob. I’ve been doing it the messy way for 40 years, such a brilliantly simple solution! Also, is the second ear an ear of silver queen corn? Where are you that you can get silver queen so early in the season? It’s one of my favorite corn varieties.
I'm glad you like that idea! It is so easy and mess-free. I think so, but it just came in my whole foods delivery with all the other corn so I didn't realize it was different until I removed the husk.
Me too - I just made a medium mess last night with a corn cob. I had moved to cutting the corn off the cob sideways, but this is better! Oh, and my cob of corn looked like Nisha's which means last night's corn cob was exported to Australia!!! Makes sense, summer is our corn season and it's our winter, so US corn and cherries! ;)

First time I've seen someone using hemp hearts for crema. My go-to seed for grinding or creaming. Great oiliness, mouth-feel, also a very good omega profile.

Oil free ‘refried bean’ tacos are my new summer favourite. Super tasty and a quick cheat is to use my huge batch of salad greens and add vegan nacho cheese sauce. Lunch in less than 5 minutes!!!
Third recipe Such a fantastic idea to combine miso paste and dulce flakes for that fish-like flavours! Have not seen anyone use the two together for thus purpose! Also, have not seen hearts of palm where I live but I will definitely try to find some to give this recipe a go!

First time I've seen someone using hemp hearts for crema. My go-to seed for grinding or creaming. Great oiliness, mouth-feel, also a very good omega profile.

Oil free ‘refried bean’ tacos are my new summer favourite. Super tasty and a quick cheat is to use my huge batch of salad greens and add vegan nacho cheese sauce. Lunch in less than 5 minutes!!!

Such a fantastic idea to combine miso paste and dulce flakes for that fish-like flavours! Have not seen anyone use the two together for thus purpose! Also, have not seen hearts of palm where I live but I will definitely try to find some to give this recipe a go!
