I grew up always eating New York pizza, but I still enjoy some square slices like Sicilian. And I don't know what Jim is talking about "no topping pizza like you have up in New York" given I used to often get pepperoni or chicken slices (chicken on the pizza) as my go to slice in New York or Hoboken (used to live in Hoboken, would travel into NYC a lot.) It's just Brian and his particular stubborn insistence on NEVER mixing meat and cheese on ANY dish that I've heard him mention, that makes him get plain ass pizza all the time and try to glorify it, not New York in general, lol. I hope Jim understands this.
Also, I wonder if (since Brian is Jewish, as he's mentioned) if he doesn't mix meat and cheese because he follows that aspect of Jewish religious law, or if it's just his general taste, since not every Jewish person follows those dietary laws strictly. Somehow, in all the times this argument with meat and cheese has come up on the podcast over the years, Brian has NEVER clarified this point, lol.

You people are far too all or nothing. Whether the crust is the best part, or even a good part, heavily depends on the quality of the crust. I've eaten pizza with crust that tasted like burnt ass, and I refute anyone telling me "oh, but you have to eat the crust." And this is coming from someone who, in the last few days of being low on food has made cornbread with water (dry as hell) and eaten it with jelly just to have something sweet. So I'm in no way a food snob.

Honestly I thought this way too when I was younger, crust was the part we threw away, no one wanted that stuff, it was dry, didn't taste like much and was merely the piece you used to hold up the good stuff with. That was before I actually ate real quality pizza. The crust being dull and unappealing is an undeniable sign of a bad quality pizza. A good pizza makes you crave the crust as much as the middle part, just like a good loaf of bread makes you desire the crust as much if not more than the middle part.

Every Pizza Connoisseur knows for that style of pizza the best part is the highly coveted small Triangle pieces on each of the 4 corners. A delicious bite-size slice that allows you to experience every element of the pizza all at once. With the highlight being the contrast between Toppings, Sauce, Cheese, and the delicious ring of burnt cheese at the edge that you can really chew on and absorb the full flavor the cheese has to offer.
