    The funniest part of Brian going on about how he only eats cheese pizza is that he has this confident "of course" tone to his voice that makes it sound all the more ridiculous. There is a local DJ is my area who "loves" hamburgers but all he eats is beef on a bun - no sauces, no veggies. He is incredibly vocal about this with this tone to his voice like everyone except the odd "weirdo" thinks like he does. That's what Brian is reminding me of.
    I don't dislike cheese pizza. I will eat it if someone serves it to me and enjoy it. But I won't enjoy it as much as a pizza with some meat topping of some sort. The last time I specifically ordered a cheese pizza I was probably under 13.

    I just checked the Roca Bar's menu and had seen that they have a breakfast pizza with sausage gravy on it. I'd imagine it's a Cornette dream and a Last nightmare.

Brian makes it sound like pizza is *only* dough, sauce, and cheese, and anything else is foreign and the whole rest of the world is just weird instead of him just not liking toppings. Also, his philosophy on the sauce makes me wonder how he'd react to a Brier Hill...

      When I was a teenager in the mid 90's Tombstone was my go to pizza. At least once a month the store around me would sell them 3 for 10$. I haven't had one since but I think that's about change

      If it's for religious reasons he should just state so. I've noticed he says he doesn't like cheese on his burgers either, and then talks about "oh if it's a good enough burger you don't need cheese", similar to how he says with pizza "oh if it's good enough pizza you don't need meat." I still wonder if that's *really* his tastes, or if he started doing it as a kid for religious reasons in his family and is just used to that way now. It'd be nice if he'd clarify this at least once. He tries to make it sound like plain cheese pizza or a plain hamburger is the "objectively best" way but I suspect it's just religious reasons he got used to growing up with in his family and is now trying to defend it as better for whatever reason, lol.

    Here's something I found out by accident . I left some leftover pizza on top of some mixed salad with lettuce tomato onions mayo and vinegar and pepper . The crust soaked up all of the juices overnight and it tasted great when I ate it later own. Also salsa on pizza is good and fresh green spinach is great on pizza

    I agree with Corny, Brian's taste in pizza is just bad. There was this pizza place back in Puerto Rico which had everything but the kitchen sink as toppings and a nice thin soft crust that was to die for. To this day I miss that place.
    That being said if I had to pick a close second that place in Evansville sounds fantastic cause who the fuck eats just a cheese pizza?!

    Nah, nah, nah. You gotta have at LEAST 3 meats! Some combination of Pepperoni, chicken, bacon, sausage, or ham. Gotta have onion and/or jalapenos/banana peppers if that's your thing. You can't just do one type of cheese; it's gotta be a mozzarella/provolone blend. And, hell, swap the tomato sauce out for BBQ sauce...THEN you've got a pizza!

    Being a lifelong resident of Evansville Indiana and having the wonderful opportunity as a kid to see Jim and every other legend perform at the Evansville Coliseum every Wednesday night let me tell you Roca Bar Pizza is well worth the trip.....Wish Jim would take that 2 hour drive down I-64 West and head back to Evansville IN for some pizza and do some signings....He would clean up in the wallet and in the stomach!

    I disagree with both. Pizza is MEAT. No vegetables, and certainly not plain cheese. And I refuse to believe that most New Yorkers, with all that pizza history, don't eat meat on their pizza pies.

    Though I have not yet tried a swedish pizza yet so I may need to amend this post. I normally would have scoffed at banana on a pizza, but after having a plantain parmesan that was delicious at some Italian/Mexican fusion restaurant, I'll give it a shot.

    Brian is right about the water. NYC has good water and good pizza. I'm a Detroiter, our water is good, as is the pizza. I lived in DC for a while and couldn't get good pizza because the water there sucks!

    Just went on TripAdvisor, the original Roca Bar is actually ranked 16th in Evansville, IN now. Its sister location in north Evansville is 11th, so I guess the split location also divided the quality chefs. Anyone in Evansville eaten at Azzip Pizza West, the current No. 1? I'm curious how it stacks up.

      Bear 7453 it’s clear that you’ve never been to Chicago and might not know anyone from Chicago. Most people don’t eat deep dish more than once or twice a year, if that. More people are getting thin crust or pan pizza like Lou Malnati’s or Pequod’s.
      Also, I’ve heard plenty of New Yorkers say you’ll find a better slice of pizza in Connecticut or Rhode Island than you will in New York.

    Gentlemen, you are both right.
    Having grown up in a large cosmopolitan eastern city (in Canada, maybe I'm DQed) with a pizza tradition built by Italian immigrants, catering to a wide price range, Brian is right about New York pizza being "better pizza" and yes, when it comes to the water, it's a real thing. "Real" pizza is indeed, delicious.
    However, having traveled and eaten pizza extensively in the prairies and other non-traditional pizza markets I can tell you JC is not wrong. The thick crusted, excessively cheese, over topped, pineapple speckled monstrosities that pass for pizzas in these remote outposts of humanity are capable of attaining greatness.
    It's almost as if bread, tomato sauce, cheese and optional others are almost universally complimentary.

    I was born in Sussex County, NJ. The first 6 years of my life were spent there and had the best sausage, pepper and onion pizza in the world.     Lol. I can’t take sides in this fight because we always get half cheese and half sausage pizza. But in my opinion thin crust is nasty. I prefer a deep dish or pan crust. But what do I know I only live in Colorado and was a manager for a gourmet pizza restaurant for three years.

    I used to live in Hoboken, right outside of NYC. It's basically like a mini-NYC there with the food and culture. My favorite pizza there was from Gio's, their chicken slice (basically a giant slice with strips of fried chicken on it.) Benny Tudino's was also really good, and had even bigger giant slices -- pretty much the biggest I've ever seen. They even market themselves as "home of the largest slice." But either place -- tons of their pies had more than just plain cheese on it. Brian saying that in the NYC "as we call it -- pizza" in reference to a plain cheese pizza is just not accurate, lol. Some people like plain, but most people prefer at least one topping.

    I too have heard that the water that goes in the pizza dough has an effect for what ever reason. To back this up i saw a documentary on a NY Pizza man who thought the water was like a folk tale, then he moved to San Francisco and opened a pizza place, the dough wasn't quite the get same he said. Although he used exact same recipe and method of making said dough, but just wasn't as good. After 5 years he moved back to NY opened a new place and low and behold the dough was like he remembered, so the only conclusion he could come to, was the water does have an effect in creating a classic NY Slice, p.s. there is no food better that Pizza!!!

    That rectangular pizza Cornette described is probably closer to authentic original pizza. There are amazing places in NJ and PA that serve thin rectangular slices.

    The best pizza I ever had was made by an Italian, and it was a cheese pizza. Just thinking about it makes my mouth water. Second best pizza was made by some white lunch room ladies at Lincoln Elementary School, which could not have been more different from the Italian made cheese pizza.

    I’m a bit of a minimalist when it comes to toppings also. I don’t just like straight cheese, but I like a simple pepperoni or Hawaiian. Not completely stuffed with toppings either, just a few on the top.

    Corny is right on. NY pizza is the drizzling shits. There is great pizza here in Virginia. My fave is the Chesapeake at Bottoms Up (Richmond, VA) topped with crab meat and onion with a garlic olive oil sauce under fresh moz.
