- MYSOOR PAK RECIPE
INGREDIENTS
1.Besan 1 cup
2.Sugar 1 ½ cup
3.Vanaspathy + Oil ½ cup + 1 ½ = 2 cups
4.cardamom powder ½ tsp
5.Salt a pinch
6.Water 1 cup
PREPARATION
1.Oil Aluminium dish and line the bottom with an oil paper, Set aside.
2.Dry roast the besan slightly, add 1 tbsp vanspathy oil mixture and mix
well, sieve add cardamom powder and turmeric powder.Set aside.
3.Heat oil & vanaspathy in a kadai till smoking point and lower the flame.
Let it be there.
4.In another broad thick pan add 1 cup water, the sugar, let dissolve, boil
stirring till soft thread consistency on low flame.
5.Add the besan into it, dissolve, cook 3 - 4 mts stirring, then pour a part of
the hot oil above the besan sugar mixture keeping the flame low, stirring continuously.
6.Repeat the step 5 several times(5 - 6 times), till the total besan oil sugar
froaths up and leaves the sides of the vessel.
7.Pour the whole into the oiled pan kept aside press slightly, make the cuts
after 10 -15 mts, and let cool 30 - 40 mts.
8.Invert and separate the pieces.
ഇതൊക്കെ ഉണ്ടാക്കുവാൻ നല്ല വൈഭവം തന്നെ വേണം. ടീച്ചറെ സമ്മതിച്ചിരിക്കുന്നു. നമസ്കാരം ടീച്ചർ.
ടീച്ചറിൻറെ മൈസൂർപാക് കഥ വളരെ ഇഷ്ട്ടപെട്ടു. മൈസൂർപാക് ഉണ്ടാക്കാനുള്ള ധൈര്യം ഇത് വരെ വന്നില്ല. പകരം seven cup cake എന്ന സൂത്രപ്പണി ആണ് ചെയ്യാറ്! പാല്, നെയ്യ്, കടലമാവ്, തേങ്ങാ ചിരകിയതു ഓരോ കപ്പ് വീതം, പിന്നെ മൂന്നു കപ്പ് പഞ്ചസാര. എല്ലാം കൂടി ഇളക്കി വശങ്ങളിൽ നിന്ന് അടർന്നു വരുമ്പോൾ നെയ്യ് പുരട്ടിയ പ്ലേറ്റിലേക്കു പകർന്നു മുറിക്കും. Thank you teacher for presenting this recipe. One of my favorite sweets. Though the method is quite time consuming and needs a lot of attention, your explanation mixed with principles of physics and chemistry along with a little history makes it so very interesting to watch. The color and texture are so authentic, I could almost smell it :)
