Hi Colette, for some reason I can't reply on the main comment section. Just wanted to say enjoyed your video and your meal looked delicious. Loved seeing little miss mouse, all the best xxx
I thoroughly understand about grief and eating. Your dear boy Jack was a treasure. I have lost 3 cats in three years and my grief hasn’t stopped. I’ve gained a few pounds when I stopped exercising and weightlifting for 5 months and those cute clothes will sit in my closet for a while longer until I’m back in shape (restarted the walks and weights a month ago). We are so similar, Colette. But we can do this! ♥️♥️♥️♥️♥️
When I lost my Kelsey I just sat for a very long time feeling alone and unsafe and dead inside. I found it hard to go to bed. Time passed. I lived. Such love we were blessed to have🦋
Can definitely understand the grief of losing Jack and how that makes you overeat, because, I still actually miss your lovely friend Jack, best wishes,
I lost my beautiful soulmate - Casey -German Shepherd in February 2004, her ashes have been with me , even when I moved to a different state ... she’s now under my silver birch with two other dogs I’ve lost over the 20 years, I talk to them all when I’m in the garden, I still grieve them .... blessings Collette
I saw Patsy on your newer videos (so adorable!!!) and thought I would watch some of your other videos.. I am 2 years your junior in age, which practically is no difference/denominator! I share much of your interests, ie sewing/crafts (I may just copy your leaf cushion pattern!), gardening and Mother Nature! Always a pleasure to see you.
Thank you Colette. I love that you allow us to go through life with you. Chapters. Pagans don't get a Bible. We don't get anything but elders wisdom, mother earth and nature. Every little thing you take us through with you is a lesson and the advice and just the thoughts out loud are educating. I miss seeing Jack's beautiful eyes and his little wag like "are we going out mom?" Better to love than never have. Thanks for sharing him. He's so good.
Colette, you're reading my mind again!😊 I turned 68 in February. Have been struggling with lots of past grief and loss, and between that and menopause, I too have weight to lose. I have lots of clothes I love that I currently can't wear. You are my hero and inspiration. ❤ Blessings! ❤
Mint! Grows and spreads with abundant abandon-but great extra fresh herb green and/ or to flavor oil and vinegar. Also try Using a couple of cloves a star anise to oils or vinegars that marinate over time making flavored concoction. They can be blended with pear juice (or OJ) just before dressing your salad.
Avocado Basil Dressing 1/2 ripe avocado 🥑 1/2 cup orange juice 1 cup fresh spinach 1/4 cup fresh Basil Blend until smooth! Makes a lovely green color💚 Delicious! Enjoy all your videos! Follow you weekly! Love & Blessings from Indiana Lisa
I love the colors of your jumper and the mustard color of your purse. You are creating a life that is peaceful and healthy and you are contributing to the health and well-being of others. Living with love and the beauty of your own unique heart's knowledge and creativity is a blessing to behold. I totally understand the grief of Sir Jack leaving the Earth. His spirit is ongoing and forever with you in the love that you shared. I know that you are totally aware of this. He is always a great part of your life and will always be. Thanks for sharing this healthy and heartwarming video with us all. It is very helpful for us all in our own ways of being present and restored by the love of life now as we are now regardless of the circumstances that may cause us to have sorrow and things that are necessary for our future health and joy. Thanks for being so helpful and thoughtful of us in allowing us to feel the same way of being together as a worldwide community 💜 Blessings to you and to everyone. ❤Thanks again ❤
@@bealtainecottage As well as you are so very heartwarming ❤ Thanks for your comment and for your energies of love and kindness in encouraging me and other people who are fortunate enough to have you in our lives 🙏 😊 ❤ ☺ 🙂 ♥
I totally understand grief eating. My husband died in 2021 and I have put on some weight. I'm not eating out of boredom. I don't have time to be bored now! But in choosing the wrong foods. But I too have recently turned 68 years old and have started to make changes in my life. I must take care of myself, my home and my dogs. You inspire me.
Hi Colette, As a women quickly approaching 60 ( next week ) I find that although I've never been a big meat eater I've just gone right off it and can just about tolerate a little chicken . My problem is that I can't always find a recipe for just salad or just vegetables and so I'm delighted when I see the recipes that you share with us . I look forward to making the salad and potatoes ..... it looks delicious . I'm also watching my weight ( aren't we all ) and can't pass a charity shop with out adding to my vintage collection Lol 😂❤ I was also brought up in the 70s when salad was a soggy piece of lettuce a tomato , spring onions and a boiled egg with a blob of salad cream . Who else remembers those days I wonder ?? 😂😂 . Sending blessings xx
It takes a long time to get over losing those we love so deeply. I'm in the same position, and haven't really picked up my life properly since. So I understand the impact on you of losing your beloved Jack. I absolutely love the colours you are using in your knitting, they are going to be beautiful! The salad looked very tasty. I hadn't thought of adding fennel, so I must try that. A great way to do potatoes too (something else to try!). Thank you, Colette, and bless you.
I see I am not the only one who is enchanted with all things Bealtiane Cottage. Cute little Miss Mouse...came to have a nice salad and cup of tea with you Colette. Oh the conversations you two must have. ☺ I think you could write a children's series about a Lady named Colette and a little Miss Mouse, who lived in a little cottage in the land of Beataine. No pressure... 😆❤ Have a wonderful evening Colette.
Congratulations 🎉 Colette on beautiful Bealtaine Cottage. 19 lovely wonderful years. Thank you for sharing and blessing me and all of us with your words of wisdom, guidance, inspiration and homour. Many blessings Colette 🌳💐🌹🐞🐝🐸💞💌💚💙💜🤎
Oh my dear I grieve with you , I loved Jack just as I’m sure we all do. I hope you give yourself the love of another friend, I’m sure there is one waiting to be rescued to receive your love. X
Colette, you truly are a Sage, a wise woman. The wisom and knowledge you've acquired through life experiences, now enable you to help others with sound judgement, clear insight and practical advice. Bealtaine Cottage and you Colette, calm us, soothe us, reassure and heal us by teaching us to connect with Mother Earth. Thank you Collete, for making a difference in my life.
Hi Colette hope you are wellx love the colours of your knitting x very sad for you about poor Jack x thankyou very much for all your beautiful videosx make lots of people very happyx please keep them comingx we love themxo
I'm right there with you! I have put on almost 30 lbs (13.6 kg) since Fall, due in part to stress caused by a toxic work environment and the stress caused by ending a really unhealthy relationship. Trying to look to the future, plan out life and am still in a holding pattern for another 12 months until we move far from here but am contemplating a job change to make that time a little more bearable. Dreaming of my urban homestead when we move to be closer to family, hoping to own the house (when we move) without a mortgage and having my car paid off, allowing me to work only part time after the move and have time to focus on what I love- gardening, creating and becoming more healthy. Thank you for your inspiration!
Hi Colette. Thank you for being true to yourself - living your best life, while respecting Mother Earth & all her creations. Thanks for not having any advertising... it is really appreciated. Thanks for sharing & your lovely calming demeanour. Thanks for your honesty & occasional 'rants'.... which are needed too! Yes, grief can be ongoing & come in so many 'guises' ... be it the passing of humans.. animals .. or loosing people (as in drifting apart), facing up to our wonderful bodies slowing down, illness etc. etc. As you know Jack is still there in Spirit with you - sharing your lives on a different level. I can still see him in my minds eye... dashing about & coming back to then check on you. Pure unconditional 'love' Great knitting. I still have some of the darker yarn... It went off the market years ago.. but has been reintroduced recently. Sending you many Blessings. Regards. Rose 🦋🌸
My mother said that a good friend of hers, many years ago, had a mouse living in her wall and she did not get rid of the little guy. Instead she named him Pepino and he would come out and beg at the table for food and she would give him the food and he would eat it and go back into is den. 😅
Whoeeeeee did everybody see the cute mouse in the beginning of the video. By the lamp behind Colette ☺️❤️🎉. At 36 sec. So cute, a house mouse. And Colette, love your knitting. Good idea to make the sleeves oker yellow. Beautiful ☺️👌❤️
Hello Colette thank you so much for your videos and spending some of your precious time with us. We can't wait to see how both jumpers turned out. Hugs and love ❤
I look forward to every one of your videos. My doctor tells me to go vegan if not full-time at lease most of the time. I've been such a carnivore for 65 years the thought does not appeal to me much, but you inspire me to give it a try. Thanks for the support by way of your videos. 😊 Blessings to you ❤
Dungaree dresses are my current go-to as they can be layered for the seasons and are very forgiving of my yo-yo weight ranges while I ride out a tedious trifecta of pancreatitis, PMR and of course menopause. My pancreas has dictated a fat free vegan diet which is a blessed relief in so many ways.
You glow like all your enchanted forest does, Colette. Much appreciated. Good journey towards health. Lost my sweetheart 8 years ago, and this year is the year for eating healthy... Good stuff.
Mmm, simple meal but sounds so tasty and simple is good! I bet it would be good with freash spinach as well. Edit to add I understand about your Jack, We had to put my sweet Angel down 2 years and I missed her so much, I had to adopt a 4 yo dog who was raised in a dog breeder environment. Bonnie still has some issues but has progress well.
Good Morning dear Colette:) Oh my, I love your new hair cut. I will definitely make this salad as it is my favourite food of the day. Sending love and hugs from Tassie. 💜
Thank you Collette❤🌲❤🌳Your gorgeous cottage is always a beautiful place to come and learn new things and hear the stories of how you created this wonderful world of grace, beauty and balanced ecological wonder. 🌿🥀🍄🌱Thank you too for chatting about healthy, delicious salads and loosing weight to fit back into you lovely clothes.😄😉😍Congratulations on you 19 years of cultivating your land. Blessings back to you.🤗🤩
Thanks Collette for the update on the knitting , at the moment im trying to make a loose cover for a comfy 2 seater couch .much used by grandchildren when they call, and trying to do a wee bit of gardening, and i love my glasshouse for tomatoes .its wonderful to be able to get out and enjoy nature ,
Another beautiful video. Thanks for the lift. Love balsamic vinegars, or apple cider vinegar, or fresh squeezed lemon with olive oil, sea salt, pepper, and dill! Our forest fires, that numbered 115, are almost half extinguished, partly by an international teamwork of firefighters, partly by welcome rains. The air is once again clean and sweet the birds are singing overtime! 👍🇨🇦😎🪶🙏💦🌸
I am sure you do miss Jack ...he was a very special and sweet companion for you .. always had a happy look on his face. My heart still misses my fur baby too...I do have another one but it's not the same. ..but it is good. ..hope that makes sense. 💕
Not surprised she has a visitor, she has so many sweet little animal treasures- have you seen the video with the orange cat clock that was sitting in a window sill? I love that. It was an early video with Jack in it- one of my favs of Jack because he plays a little trick. He's so cute... I think we all miss him but thankfully we can see him again and again in the videos.❤
Hello..like always its beautiful and intertaining..yes I understand grief and how it plays with my mind at times..next month it will be one year my hubby passed😢... I am also vegan..but although I am not eating properly on my own or don't eat much have put on something..dont know why?? 😅😅 Grief does work like that..i love watching you .always so much good advise and happy moments.. I do struggle being on my own..😢 Thank you for sharing and given happy moments . Cl
You look absolutely amazing. I would have never guessed your age. I enjoy any kind of berries in my salads. Whatever berry I have at the time, sometimes multiple varieties of berries. 😊 Have a wonderful weekend.
How cute! I had a little mouse visit one of my plant pots during snow of December or January. I would put out cheese and fat balls for this beautiful little creature. We all have a role to play on Mother Earth. I pray every morning and include “ all creatures great and small including mice & rats” most of my neighbours think that I am either a Witch or that I am mad/crazy”. Blessings from South London. We have had beautiful weather here, but I am hoping for some rain soon! 😂
It is always such Pleasure to See one of your vlogs/videos pop up in TH-cam, and though I haven't knitted in ages so I like living through you vicariously. 😊 Blessings to you. Gorgeous day here in Western Oregon, USA.
Hi Colette, you've been really busy with your knitting! Looks good! Yes, lots of salad now the weather's warmer, I like the sweer potatoes cooked with their skins on, not only healthy but rastes better that way too! We have many vegetables and berries growing in our small allotment in our garden, looking forward to eating those! Many blessings ❤️
I just love your cottage & your woodland garden of course. My granddaughter has ordered another of your books, and I am excited about it arriving here soon. Blessings and you are such a speedy knitter. ❤
A lovely sharing and such delicious fayre. I am so deeply sorry to hear about your beloved Jack, I am a new subscriber and unfortunately didn't see him. Losing a furry is painful I lost my special boy 2.5 years' ago. I chat to him regularly. Yes Vegans rock, all that palava in meat also has metaphysical implications of discarnate souls torment stuck on it. Luv the colours of the jumper too - blessed be lovely lady xx
Love the knitting Colette and looking forward to seeing the finished jumpers. Like you I have to have a task to hand when I'm sitting in the evening and not reading. At the moment I am crocheting squares to make up into a blanket for the winter to get rid of some leftover wool.
Hi Collette I’m trying (but not very hard) to loose some weight So I’m always glad of your input Hot weather just drains my energy so curtails my exercise All my trousers are to tight the salad you made looks great thankyou xxxx
My knitting has been languishing the last few weeks Im sad to say… I started my first top and it has been stuffed into a bag & set aside until i figure out how to do a proper wrap & turn 😅 Your salad looks delicious, I think i’ll improvise with my leftover dinner taters & have that for lunch today! 😋
dear Colette....you knitting looks very good....................and your food......yummi................Blessings and Greetings from Daggy,Kiel,Germany☘☘☘
I love the colour combos of your wool! Gorgeous. I've had several Linen pieces of clothing and I found them to wrinkle very easily and hard to iron. Not sure if you noticed that or not. :D
You are looking great for 68! Well done. I think it originates from your healthy mind and spirit and the energy that it transmits, physically and aurally.
It's partly your garden as you inspired me in a better direction there. How many "children of Bealtaine Cottage" are now out there scattered across the globe I wonder with you inspiration (or should I say more your helping act as liaison between us and mother nature?). Thank YOU!
Love so much your giggles, you make me Giggle 🥴: you are so gifted Colette, me thinks I shall take up Knitting once more 🤔 Mary Canada 🍁 and born bred Irish ☘️ 🇮🇪
Thanks for posting! The salad looks yummy and I’ll have what you’re having tonight 😊 I get so engrossed looking about your rooms love the decor’ ❤ have a beautiful day!
Wonderful to see you. Aren’t the fresh leaves and new herb’s delicious? Such a treat. I used to dislike potatoes until I ate the ones I grew on a whim. Now I love love fresh potatoes! and I eat them warm on top of fresh salad too. Yum. Nice catch up. Blessings to you🐇🌷
I so understand...been in a emotional funk when our son passed suddenly 17 months ago and then his dog passed last July...although I went the other way and lost 61 lbs. ANYWAYS--wish I could give you a hug, Collette. smiles
We are all with you with your grieving for the beautiful, wonderful Jack. I lost my Charlie dog 3 years ago now, and I shall never forget him. He was my angel on earth. But I now have Madge, the rescue greyhound, and I tell her about him every day. I also tell her how good she is too. As with my Charlie, Jack's spirit will always be with you, as you walk your woods, and in your cottage, and wherever you are. Love your hair cut by the way. I love love love the yellow wool that you are going to be doing the sleeves of your lovely knitted jumper with. Your roses are stunning out in your front porch. My David Austen Gabriel Rose is just about to bloom forth, and it is the most beautiful, lovely smelling rose, dark pink, as appose to the lovely pale pink roses you have. Blessings, hugs and love to you Colette, from a hot and sunny West Devon, and Jilly & Madge the rescue greyhound. xxx
Re-food 💯agreed I’ve been plant based now coming into my 12th yr. Oh Colette what’s the green forest scene pic in the black frame. Can you show it closer in a video please as I absolutely love it. Green and Black are my fav colours 💚🖤
Hi Colette love your relaxing videos, the jumpers will be beautiful, my mum was the same knitting, made some lovely things, sadly no longer with me, you have done an amazing job!, you are looking very well, I am on the same diet a you, and will try something like that, looks really yummy 😋 need to lose the pounds round my middle 😂(sweet tooth), I can understand the heartache of losing a dog, one of the family, and such a companion, I have lost two, and now may lose a third, as my Jack Russell x is getting on in years😢I do have two others, wouldn’t be with out a dog, but they each have there own personality’s, and are always remembered and loved with good memories, I hope one day you will have another unique friend💕👋🏻🐶sending love enjoy this beautiful time of year🌺🇬🇧🌷🌸💐xxx
My favorite salad dressing is Red Wine vinegar or '3-2-1': 3 parts balsamic, 2 parts maple syrup and 1 part dijon. Shake or blend like crazy. I then put it in a squirt bottle to free my salads and veggie sandwiches. Yum!
Thanks for sharing. I put ground seeds in my dressing - mostly hemp, also sunflower and flax, to change up the fat, for nutrition and thickening, and some mustard with the vinegar or lemon to help it emulsify. It thickens if left a while . I like garlic so theres usually a clove or two in the bottle, and dried herbs. It keeps well in the fridge.
@@bealtainecottage 🙂 The mustard/ lemon means it can take quite a bit of water, too - more bulk- and still have some thickness. My other most used dressing is a tahini sauce that I will also put on for example a bowl of steamed veggies, beans, grains: about a quarter or a third tahini and the rest water with a few tablespoons of lemon, [ground] mustard, garlic [powder], a little tamari, seasonings ( I like cumin and white pepper), nutritional yeast ( which also thickens it a bit). I use a whisk in a jar to emulsify.
My standard dressing is red wine vinegar, dejon mustard, clove of garlic, salt and pepper. Whisk in olive oil. Delicious! I never buy store bought dressings.
I have an occasional visitor in the form of Mrs Mouse…she pops in and out as the back door is open and she lives on the veranda!
You have to make her a little sweater to ☺️😅❤️
Yes , I saw here make an appearance

Another beautiful video. Thanks for the lift. Love balsamic vinegars, or apple cider vinegar, or fresh squeezed lemon with olive oil, sea salt, pepper, and dill! Our forest fires, that numbered 115, are almost half extinguished, partly by an international teamwork of firefighters, partly by welcome rains. The air is once again clean and sweet the birds are singing overtime! 👍🇨🇦😎🪶🙏💦🌸
Collette your knitting 🧶 is beautiful love 💗 the colors !And the organic salad 🥗 looks delicious my kind of dinner indeed …..Blessings Collette
I am sure you do miss Jack ...he was a very special and sweet companion for you .. always had a happy look on his face. My heart still misses my fur baby too...I do have another one but it's not the same. ..but it is good. ..hope that makes sense. 💕
You have a little mouse in the background, by the lamp - so cute❤
My little visitor!
@@sue7621 so are mine 😂😂
Our wonderful furry friends live so few years but leave large loveprints in our souls, until the next scamp bounds into our hearts again. ❤
Cl
Both jumpers are coming along nicely. Love the colors! And excellent job matching the bag! So good to see you, Colette!
I love how you say herbs and vitamins!
Oh my goodness, that pattern and color top looks lovely on you!
Dungarees❤ something my mom used to say, thank you for the ❤memory.
Love the knitting Colette and looking forward to seeing the finished jumpers. Like you I have to have a task to hand when I'm sitting in the evening and not reading. At the moment I am crocheting squares to make up into a blanket for the winter to get rid of some leftover wool.
Colette- always enjoy your videos. A little company in the background behind you- a little mouse zipped in to listen too!😀
I have never thought of putting potatoes on a salad. I will be now!
That's exactly what I thought!
Hi Collette I’m trying (but not very hard) to loose some weight
So I’m always glad of your input
Hot weather just drains my energy so curtails my exercise
All my trousers are to tight the salad you made looks great thankyou xxxx
Losing weight to improve health and mobility takes determination…it’s hard but worth the benefits ❤️
one lime, (juice) sprinkle of sea salt...great dressing
My knitting has been languishing the last few weeks Im sad to say… I started my first top and it has been stuffed into a bag & set aside until i figure out how to do a proper wrap & turn 😅 Your salad looks delicious, I think i’ll improvise with my leftover dinner taters & have that for lunch today! 😋
Enjoyed your little mouse!
Scrambled eggs on fresh greens, sprinkled with Worcester sauce is another good blend
Not for me but a lovely recipe for many 😊
The yellow/gold wool for the sleeves if your jumper is gorgeous and such a wonderful match for the bag. Loving your posts. 🥰
dear Colette....you knitting looks very good....................and your food......yummi................Blessings and Greetings from Daggy,Kiel,Germany☘☘☘
Colette, your jumper will look lovely. You will have to model it for us when you've finished knitting.
Blessings ❤️🏴
I love the cottage and your easy way. It's so refreshing.
I love the colour combos of your wool! Gorgeous. I've had several Linen pieces of clothing and I found them to wrinkle very easily and hard to iron. Not sure if you noticed that or not. :D
I steam iron them
Looking amazing xxx
You are looking great for 68! Well done. I think it originates from your healthy mind and spirit and the energy that it transmits, physically and aurally.
Thank you 🙏 for the lovely letter and pics of your glorious garden 😊
It's partly your garden as you inspired me in a better direction there. How many "children of Bealtaine Cottage" are now out there scattered across the globe I wonder with you inspiration (or should I say more your helping act as liaison between us and mother nature?). Thank YOU!
Love so much your giggles, you make me Giggle 🥴:
you are so gifted Colette,
me thinks I shall take up Knitting once more 🤔

I see a little mousey walking in the background passing behind the table lamp & going behind the couch! 👀
She comes in and out as I leave the back door open 😊
Thanks for posting! The salad looks yummy and I’ll have what you’re having tonight 😊 I get so engrossed looking about your rooms love the decor’ ❤ have a beautiful day!
You are the best, thank you
Wonderful to see you.
ANYWAYS--wish I could give you a hug, Collette. smiles
Blessings dear Linda xxx Colette
I love when you tape inside your house!
Blessings, hugs and love to you Colette, from a hot and sunny West Devon, and Jilly & Madge the rescue greyhound. xxx
My furry friend will be with me this summer!
@@bealtainecottage Oh Colette, I am soooo pleased for you! Love and hugs, and licks from Madge! xxx
Blessings to you too Ms. Colette
Orange goes well with tahini, then add what u fancy a little cider vinegar , herbs, black pepper, whatever you fancy.
Re-food 💯agreed I’ve been plant based now coming into my 12th yr. Oh Colette what’s the green forest scene pic in the black frame. Can you show it closer in a video please as I absolutely love it. Green and Black are my fav colours 💚🖤
Yes delicious Colette your salad !! My favorite too. 💕🌷
Beautiful, beautiful lady ❤ Thank you for sharing your life
I love your channel!
Dear dear Jack x
I see Mrs. Mouse! Took me a moment to figure out who she was.😊
My favorite salad dressing is Red Wine vinegar or '3-2-1': 3 parts balsamic, 2 parts maple syrup and 1 part dijon. Shake or blend like crazy. I then put it in a squirt bottle to free my salads and veggie sandwiches. Yum!
Mmm 😋
❤❤❤simple life❤❤❤
Thanks for sharing.
Wonderful ideas here for dressings and I appreciate your recipes 😊
@@bealtainecottage 🙂 The mustard/ lemon means it can take quite a bit of water, too - more bulk- and still have some thickness. My other most used dressing is a tahini sauce that I will also put on for example a bowl of steamed veggies, beans, grains: about a quarter or a third tahini and the rest water with a few tablespoons of lemon, [ground] mustard, garlic [powder], a little tamari, seasonings ( I like cumin and white pepper), nutritional yeast ( which also thickens it a bit). I use a whisk in a jar to emulsify.
the cottage looks so beautiful
My standard dressing is red wine vinegar, dejon mustard, clove of garlic, salt and pepper. Whisk in olive oil. Delicious! I never buy store bought dressings.
Another great recipe 🙏 thanks
