I don't think this was mentioned in the video; did you keep this in a temperature-controlled area? The "rotting" areas on both bars kind of remind me of when chocolate blooms. I believe the process has to do with the cocoa fat solids separating from the rest of the chocolate due to their having a lower melting temperature. If they weren't kept in a fridge I'd be interested to see what it would look like should it have been.

chocolate that turns white isn't rotten or bad. THat is just the cocoa fat separating from the chocolate. It will taste 90% the same (unless you seal it in resin), and you can just melt and cool it to get it to look normal again

If stuff floating out of the resin is a problem, and you can't vacuum it to keep it in there, couldn't you start with a sheet of mostly cured resin, and put that on top of it, to make sure there's plenty of resin on top of it? Maybe put a similar sheet of resin on the bottom of the mold too, to make sure there's no bare resinless spots on the bottom of things after unmolding, in case part of it settles to the bottom?

Chocolate is one of those foods that doesn't expire, like honey. It just blooms. All you need to do is remelt it and it will be like new.
