Excellent Video! FYI: the pixelate node was updated in 4.1 and now has a value in the node. The effect is nearly the same as the two scale nodes, thus removing the need to scale, but it does look slightly different to me. Try it for yourself.
@@TutsByKaiive tried this but some parts get all wonky and messed up when rendering (the composite gets larger in size than the view-layer when rendering a image)
Also u can tweak both scale nodes to go from 8 bit to 24 bit per se. i did some playing around and it works.

Can u share a example of something rendered with that node in blender 4.1 and blender
there is also a way to limit the color palette using a separate HSV node if I recall correctly
