You did very well 👏 👌 My few tips: 1. After grilling the eggplant, put it inside a plastic or paper bag for few minutes. It'll be easier to peel. 2. You can spread the eggplant more to make it thinner. 3. Tortang talong goes very well with Soy Sauce and Kalamansi/lemon dipping sauce. You can add garlic chilli oil or simply chilli if you fancy a little heat 😊
What you did was a very stylish way to prepare "Tortang talong", the traditional or the "simple household" way of cooking it is slightly similar to how Japanese cook "vegetable tempura". You just need to grill the eggplant or boil it (for ease) then peel the skin and "dip" it in a egg batter with seasoning, next will be the frying after that it's done. You can maybe add thinly sliced tomato or onion on the batter but that's up to preference. It's one of my favorite household dishes.
Boiling eggplants for tortang tslong is the worst way of making tortang talong. The skin should be totally grilled black to give the distinct smokey flavour in the eggplant. I will never eat a tortang talong if the eggplant was boiled. It is bland and wet.
@@arnieljovero1008 It's for ease and an option, most importantly it's preference. And it's not like you can't drain a bit of the liquid, who cooks with an excessively wet eggplant anyway.

Unless you like cooking with lots of msg or magic sarap it might better but where will you get the smokiness of the grilled talong? You maybe like mediocrity in the taste of food but some people will not tolerate them. Maybe you did not know that eggplants are full of water or rather 90% moisture. That is why Italians sprinkle salts on sliced eggplants to remove all the moisture so that the eggplant lasagna will not be soggy ang their breafed fried eggplants will be crispy. Maybe you are not a cook and know nothing about cooking so you want ease and convenience. That is fine with me. Furthermore i think Hiro is a Chef and you know that Japanese cooks with passion, aesthetics and taste. Hiro is even hard on himself when cooking.

Next time, I suggest not to put the eggplant in icebath afterwards. Just put it in a bowl or any container which you can cover with clingwrap or any cover for that matter. Let it sit for a few minutes. The trapped steam will make peeling the eggplant easier plus you keep the smoky flavor and aroma. Once you put the eggplant with egg in the pan,do not touch it until it is ready to be flipped so that it will not end up like having scrambled eggs on the side.😊
the smokiness from eggplant will make it more delicious, and tortant talong is a very simple dish (eggplant and egg only) actually you just make it more fancy. nice work hiro sama. sometimes instead of ground pork/beef i used corned beef much cheaper :) and i think you forgot the dipping sauce, soysauce and calamansi with chili. also it would be more nice if you make it more thinner. sometimes i put breadcrumbs too to make it crispy japanese style!
Craving for tortang talong now! We have the same way of preparing it, except for the greens that you add on top while frying. Most Filipinos use catsup, but i prefer soysauce + calamansi + onions and chilis. Yummmmmm

Is that the original tortang talong? I grew up with it having ground pork all the time. The plain one is just a recent discovery of mine coz someone at home just wanted to be more vegetarian -- and nakakapanibago din esp if you're used to the one with meat.

Cheap, healthy and delicious. Downside is its time consuming to make specially you have to be gentle on peeling the skin off after roasting it on the fire! Very good 11/10 lawl

Looks like a premium tortang talong! Mouthwatering! 😋 You can omit the ground pork. You can have thick slices of the onions for added texture and then the chopped tomatoes for added flavour. You can either dip it in ketchup or spiced vinegar. Grilling the eggplant is to lock in the flavour and for easy frying without using too much oil. Maybe next time you can cut the eggplant in half so it won't be too thick before soaking it in the egg together with the onions and tomatoes. And for it to cook quicker. The eggplants in Japan are quite big.
Hi Hiro, you did it right! My lola used to cook it this way but without parley, in authentic tortang talong there is no parsley. But this is very good!!!!
Very nice!. you can cut it in half if the eggplant is too thick. then do the same thing again. you get 4pcs instead of 2. the more the better! nyahaha. also you don't have to worry about authenticity. Tortang talong is basically the eggplant and egg only then fried. add anything you want and it will still be tortang talong as long as the 2 key ingredients is there.
Wow tortang talong with ground meat is new to me! Tortang talong is usually just eggplant and eggs. But this looks good too! I want to try adding ground pork someday. Oh and definitely the eggplant needed a little bit more grill. It should be really soft 😊
I make Eggplant Torta only with mashed eggplant. Different to authentic style. I put extra onions and pepper, then egg and flour. The end result tastes similar to burger. There are other kinds of torta. Tortang hipon (shrimps). Tortang kalabasa (squash) or any other veggies. It's like overcooked omelette.
This one is called "tortang talong na may giniling" giniling meaning minced meat. Yummy! We like cooking the original one (eggplant and egg) and also this one when we have some leftover giniling (filipino picadillo). We'll dip it in banana ketchup or soy sauce. Filipinos love their garlic and onion.hehe We eat eggplant any time of the day with rice. The eggplant still needs some grilling if it's still hard. You need to cook it through so you can easily flatten it and won't be too bulky to fry especially with the added minced meat. Add some cornstarch to your egg mixture too to make it more solid. Honestly, your version looked good and yummy! And the wife loved it hehe Congrats on the merch! Clean and simple design that can we worn anytime and pairs well with jeans, shorts or skirt.
@@joejunior4700 agree and the big fat eggplants are perfect for lasagna and burgers etc but can still be used for torta if one is really craving for it, takes longer to grill though. Tastewise, our local eggplant is more flavorful for me.
tortang talong with banana ketchup is one of my fave breakfast meals. Though I usually just have the tortang talong as a side, together with the main protein of choice like hotdog, chorizo, tocino or tapa.

Nice....while catsup is the usual dip, try dipping the eggplant torta in anchovy sauce (fish bagoong) with calamansi. It gives the torta a totally different flavor and umami. You may forego catsup altogether. I know i did once I had the anchovy+calamansi dip. Next time, don't cut off the eggplant stalk - this is the handle you use when broiling over fire so no need for skewers and also when dipping in the egg batter prior to frying.

There are several ways of doing it and how you did it was one of those ways. You did everything right. The eggplant was cooked perfectly, not too soft otherwise it would break. Normally, I would add the cooked ground pork in the egg before I put it on the eggplant but you did very good, including the thickness. Great job!
That was so good! But you're right, yours was pretty challenging. I just boiled my eggplants and I don't put meat, I just put eggs with seasoning. If I want more flavor I add minced garlic and capsicum and a lot of ground black peppers mixed with eggs.
Thanks Hiro, for featuring-and putting great effort in cooking-one of my favorite dishes. You did really well! (I personally wouldn’t put the grilled eggplant in an ice bath. I feel it washes away some of that delicious grilled flavor.) This is how my mother always made tortang talong-with ground pork sautéed in garlic, onion, & tomato, seasoned with soy sauce & finely ground black pepper-so, this is how I make mine. Very yummy. Goes well with tomato ketchup, but I prefer patis (fish sauce). With hot steaming rice, of course!😋 Itadakimasu! Note: Our native eggplant is thinner than the Japanese one, so grilling ours is easier & cooks faster. Grilling eggplant & then peeling it is quite a task, but worth it for the great taste!
Wow that's one Fancy Tortang talong I my self always cook tortang talong but I don't poke it I just directly put it on fire to trap The heat inside to make it's softer. But anyways it's looks good and im sure it's delicious.

Onw of the most UNIQUE Tortang Talong i've ever seen.😍 looks very delicious. i suggested that you don't need to use some grill to toast the eggplant. you should charred it in fire to make the skin grilled. i'm really amazed how you nailed every filipino dish you cooked even you only watched it on youtube.💕 very nice! keep it up!❤
You did good! You made a variation of combining the Tortang Giniling (Ground Pork/Beef Omelette, a.k.a fritata) and Tortang talong. That looks SOOOOO GOOD!
It is fine with the egg. I guess eggplants in japan does not come with the branch still on it. It is preferable to still have the branch because usually it is used to be easier to cook the tortang eggplant. It is usually used as a handle while cooking. :)
You can also boil the eggplant if grilling is too much to do, then once the eggplant soften you can drain the water let it cool a bit and remove the skin 😊
It looks great! You might think it's not authentic but that's how you cook Tortang Talong, it's just that eggplants here in the Philippines is smaller. And usually this is cooked without minced pork, especially when you are tight on budget or does not have much time. You did great! I got hungry watching this, this is one of my favorite Filipino dishes.
Good job. You did it correctly. Really looks delicious. The eggplants are different from what we have here in the Philippines. They look more like courgettes.
You did good with lots of toppings on it. What I usually do is to put the eggplant in the egg batter and then fry it without the giniling. Once it's cooked out the ginigiling on top of it.
Hiro-san not bad for a first try. Next time do it one at a time. Using fire for the eggplant is fine, the fire should have been very low though, to cook the core. If the core is soft you can spread it out. Also, mix the meat with scrambled eggs first, then by batches mix the eggplant on a plate, then fry them separately.
Try it with tonkatsu sauce! Yummy too. Sometimes I would get a spoonful of this, dip it in a bit of fish sauce or dab/sprinkle it with a bit of liquid seasoning (Maggi or Knorr) if it's still lacking in flavor then dip in ketchup. Looks good Hiro! You can use less meat next time if you want more eggplant flavor.
I think you did excellently for your attempt Hiro-san. I have not cooked tortang talong a lot myself, but I might do some things differently. I would char the eggplants with open charcoal if the family is already cooking something over the grill, but the stove top method is fine. A butane torch is a quick alternative if you are only using an induction oven. To remove the charred skin, I like to use the technique I learned from watching mexican cooking, where they also char sweet peppers and chilies. After grilling, I immediately put the eggplants in a Zip lock bag or an airtight container. I would allow the egg plant to sit and the remaining heat would then sweat the eggplant. I find that this method makes it easier to remove the charred skin, and preserves the egg plant flavor more. Also, the common eggplant in the Philippines is of the longer but thinner variety. The thicker and shorter one you used did make the torta thicker, I observed. Nevertheless, the taste is much more important. The humble tortang talong is actually one of the recipes mothers would cook if their children dislike eating greens in order to introduce vegetables in their diet. Over time, mothers would reduce the amount of ground meat in their recipe while adding minced carrots and potatoes. Before the picky eaters would notice, they aren't eating tortang talong anymore, but a vegetarian eggplant and vegetable omelet. I'd like to se your attempt in cooking Okoy, a battered seafood and vegetable pancake. Think of the Japanese Okonomiyaki, but cooked like a tempura.

Ooohhh love it! I suggest that you dip it in a soy sauce, lemon (or kalamansi), and chopped red chili sauce. You could have also flattened the eggplant thinner and cook it one at a time, the egg has to be a bit crispy. Other than that, I appreciate you being respectful of our cuisine.
That one is a fancy tortang talong.. the simple version is just an eggplant and egg, but if you have a child that don't want to eat vegetables we usually add pork giniling in the dish.. (I think you just put to much pork that's why your tortang talong is thick..) Some people boil the eggplant to peel the skin.. but i prefer the smokey flavor of the direct fire method..
Mash the talong with a fork very well until it becomes thin and widen. Make sure that the pan is heated well before you put the oil. Then, put the talong on the heated pan and wait 1 min before you pour the rest of the beaten eggs then wait until the edges becomes golden brown before you flip it. Actually I failed many many times before😅. The more crispy the tastier.
The way I've had it growing up is having the eggplant charred off. It's essential to giving it a grilled taste. My Lola also used to put green onions in the egg wash. But hey... to each their own. Awesome video!
You did good! Tortang Talong looks authentic! Anyway, the difference I can see is the size of the eggplants, we have long and thin ones but it doesn’t matter but the end product will be the same.
You can just boil the eggplant for option however, the burnt taste from grilling will be gone. You can also cook it without the pork. Just the vegetables will do.
That's usually how we have it at home. Others usually have it thinner but we like the thicker version for our family. Banana ketchup is the best sauce for it with a little togarashi.

Japanese eggplants are not the same as Philippines eggplants, most eggplants sold are those cute and stubby one.
@@joejunior4700 agree and the big fat eggplants are perfect for lasagna and burgers etc but can still be used for torta if one is really craving for it, takes longer to grill though. Tastewise, our local eggplant is more flavorful for me.

tortang talong with banana ketchup is one of my fave breakfast meals. Though I usually just have the tortang talong as a side, together with the main protein of choice like hotdog, chorizo, tocino or tapa.
Thank you for featuring my favorite way of preparing eggplant. I usually use the long skinny variety, sometimes adding hot pepper flakes & slices of sweet onions. I like having simple Tortang Talong for breakfast or lunch with rice & banana ketchup. You did great making it. Looks so delicious👍👍👍👍
It looks really good. This is considered a premium tortang talong coz there's giniling.
Nice....while catsup is the usual dip, try dipping the eggplant torta in anchovy sauce (fish bagoong) with calamansi. It gives the torta a totally different flavor and umami. You may forego catsup altogether. I know i did once I had the anchovy+calamansi dip.
Next time, don't cut off the eggplant stalk - this is the handle you use when broiling over fire so no need for skewers and also when dipping in the egg batter prior to frying.

Looks great! It only looks different because eggplant is thicker than usual. You can also flatten it more.

There are several ways of doing it and how you did it was one of those ways. You did everything right. The eggplant was cooked perfectly, not too soft otherwise it would break. Normally, I would add the cooked ground pork in the egg before I put it on the eggplant but you did very good, including the thickness. Great job!
That was so good! But you're right, yours was pretty challenging. I just boiled my eggplants and I don't put meat, I just put eggs with seasoning. If I want more flavor I add minced garlic and capsicum and a lot of ground black peppers mixed with eggs.

This is how my mother always made tortang talong-with ground pork sautéed in garlic, onion, & tomato, seasoned with soy sauce & finely ground black pepper-so, this is how I make mine. Very yummy. Goes well with tomato ketchup, but I prefer patis (fish sauce). With hot steaming rice, of course!😋 Itadakimasu!
Note: Our native eggplant is thinner than the Japanese one, so grilling ours is easier & cooks faster. Grilling eggplant & then peeling it is quite a task, but worth it for the great taste!
the technique was correct but this is like an elevated / premium version. typically, the ones we have are thinner and with less meat or no meat at all

Wow that's one Fancy Tortang talong I my self always cook tortang talong but I don't poke it I just directly put it on fire to trap The heat inside to make it's softer. But anyways it's looks good and im sure it's delicious.

You did good! You made a variation of combining the Tortang Giniling (Ground Pork/Beef Omelette, a.k.a fritata) and Tortang talong. That looks SOOOOO GOOD!
It is fine with the egg. I guess eggplants in japan does not come with the branch still on it. It is preferable to still have the branch because usually it is used to be easier to cook the tortang eggplant. It is usually used as a handle while cooking. :)

You can also boil the eggplant if grilling is too much to do, then once the eggplant soften you can drain the water let it cool a bit and remove the skin 😊
You can boil it, but it's not recommended, the grilling part is very important step and is responsible for the unique taste of tortang talong.

It looks great! You might think it's not authentic but that's how you cook Tortang Talong, it's just that eggplants here in the Philippines is smaller. And usually this is cooked without minced pork, especially when you are tight on budget or does not have much time. You did great! I got hungry watching this, this is one of my favorite Filipino dishes.
That's fancy tortang talong! Even without the ground pork, it will still taste good. Just put finely chopped onions on it before adding beaten eggs.

If you can find Filipino eggplants, they are much slender and longer than the Japanese eggplants you used. They will cook more reliably

You did good with lots of toppings on it. What I usually do is to put the eggplant in the egg batter and then fry it without the giniling. Once it's cooked out the ginigiling on top of it.

2 ways to get the eggplants soft, first is what you did, grill or direct heating. Second is boiling.
Hiro-san not bad for a first try. Next time do it one at a time. Using fire for the eggplant is fine, the fire should have been very low though, to cook the core. If the core is soft you can spread it out.
Also, mix the meat with scrambled eggs first, then by batches mix the eggplant on a plate, then fry them separately.
Try it with tonkatsu sauce! Yummy too. Sometimes I would get a spoonful of this, dip it in a bit of fish sauce or dab/sprinkle it with a bit of liquid seasoning (Maggi or Knorr) if it's still lacking in flavor then dip in ketchup. Looks good Hiro! You can use less meat next time if you want more eggplant flavor.

This has the exact same ingredients and style as my mom used to make. The best way to eat tortang talong! The ketchup adds a perfect balance.
I think you did excellently for your attempt Hiro-san. I have not cooked tortang talong a lot myself, but I might do some things differently.
I would char the eggplants with open charcoal if the family is already cooking something over the grill, but the stove top method is fine. A butane torch is a quick alternative if you are only using an induction oven.
To remove the charred skin, I like to use the technique I learned from watching mexican cooking, where they also char sweet peppers and chilies. After grilling, I immediately put the eggplants in a Zip lock bag or an airtight container. I would allow the egg plant to sit and the remaining heat would then sweat the eggplant. I find that this method makes it easier to remove the charred skin, and preserves the egg plant flavor more. Also, the common eggplant in the Philippines is of the longer but thinner variety. The thicker and shorter one you used did make the torta thicker, I observed. Nevertheless, the taste is much more important.
The humble tortang talong is actually one of the recipes mothers would cook if their children dislike eating greens in order to introduce vegetables in their diet. Over time, mothers would reduce the amount of ground meat in their recipe while adding minced carrots and potatoes. Before the picky eaters would notice, they aren't eating tortang talong anymore, but a vegetarian eggplant and vegetable omelet.
I'd like to se your attempt in cooking Okoy, a battered seafood and vegetable pancake. Think of the Japanese Okonomiyaki, but cooked like a tempura.

Ooohhh love it! I suggest that you dip it in a soy sauce, lemon (or kalamansi), and chopped red chili sauce. You could have also flattened the eggplant thinner and cook it one at a time, the egg has to be a bit crispy. Other than that, I appreciate you being respectful of our cuisine.
You did it right. When I cooked it, I don't add any meat, just scrambled eggs with lots of garlic. and it is still delicious!

That one is a fancy tortang talong.. the simple version is just an eggplant and egg, but if you have a child that don't want to eat vegetables we usually add pork giniling in the dish.. (I think you just put to much pork that's why your tortang talong is thick..)
Some people boil the eggplant to peel the skin.. but i prefer the smokey flavor of the direct fire method..
The way you cook the tortang talong is with a twist. So yummy im sure
Mash the talong with a fork very well until it becomes thin and widen. Make sure that the pan is heated well before you put the oil. Then, put the talong on the heated pan and wait 1 min before you pour the rest of the beaten eggs then wait until the edges becomes golden brown before you flip it. Actually I failed many many times before😅. The more crispy the tastier.

The way I've had it growing up is having the eggplant charred off. It's essential to giving it a grilled taste. My Lola also used to put green onions in the egg wash. But hey... to each their own. Awesome video!
You did good! Tortang Talong looks authentic! Anyway, the difference I can see is the size of the eggplants, we have long and thin ones but it doesn’t matter but the end product will be the same.

You can just boil the eggplant for option however, the burnt taste from grilling will be gone.
You can also cook it without the pork. Just the vegetables will do.
We actually boil the eggplant because we wanted to include the skin when frying it with egg, we don't put beef. But yours look delicious too!

That's usually how we have it at home. Others usually have it thinner but we like the thicker version for our family. Banana ketchup is the best sauce for it with a little togarashi.
