- Bardoli is a town in Gujarat near Surat. Its known for its food. Patra is a Gujarati Traditional Farsan which usually steam
cooked but Bardoli Patra is fried and very crisp. This dried patra is so popular that its exported to other country as well and its also available online. Today I am sharing the perfect recipe and trust me the taste, texture and everything is 110% same as Bardoli's Famous Patra Recipe.
Ingredients:
2 Cups Gram flour
1 Cup Rice Flour
1/4 tsp Papad Khar/ Baking Soda
1/4 tsp Cumin Seeds
1/4 tsp Fennel Seeds
1 tsp Coriander Seeds
1 tsp Carom Seeds
1/4 tsp Asafoetida
1 tbsp Groundnut Powder
1 tsp Sesame Seeds
1 tsp Garlic Paste
1 tbsp Ginger Chilly Paste
1 tsp Coriander Cumin Powder
1/4 tsp Turmeric Powder
1/2 tsp Red Chilly Powder
1/4 tsp Garam Masala
1/4 Cup Jaggery
2 tbsp Tamarind Water
Water as Required
Salt to Taste
1 tbsp Hot Oil
1/2 Lemon Juice
12 Colocasia leaves (known as Alu na paan or alvi na paan or patra)
Above measurements will make 4 rolls.
Note:
1. Batter has to be very thick like paste. Do not add more water.
2. Roll it very tight.
3. White cutting it with knife do not apply pressure on it. Use very sharp knife.
4. Fry it on very low flame.
5. Store in in Air Tight Container for up to One month.

So this is called "aluchi vadi" in maharashra but the thing is first we steam it and then cut and then fry ...btw nice recipe

Hi Rachana budukale, there is 3 ways to make this patra (aluchi vadi )you can first steam and than cut it and fry them , 2nd way just fry straight and 3 rd way is no need to fry it, but for that you have to take only one leaf of patra and apply batter on patra cut into 3-4 small piece depend on the size of the patra and just put little oil into the frying pan on low to medium heat ,cover the pan with lid for few minutes to cook well and stir it as it need to and check if it’s cooked after 15-20 mins depend on the quantity of patra you have . This way also taste really good.

I'm from himachal and we call these as patrodey
This is called Pathrodé in Mangalore. We stem the leaves after stuffing them with the besan masala and then temper it with mustard, curry leaves and turmeric.

It's down to South from North Saraswath Brahmin got it to costal karnataka and kerala we use rice coconut tamarind asafoetida chilli powder... We do steam it, we also do rava fry.
