Correct, battle medicine is only a medicine check as per description. treat wounds is an activity that lasts 10 minutes thus cannot be feasibly used in combat. Unless you stall for 100 turns.

Yes, anytime you get a feat granting you anything that uses focus points (focus spells, Ki powers, witches' hexes) you add a focus point to your pool, up to 3 focus points.
Assurance doesn't work with mortal healing I think, since assurance gives you a 10+proficiency instead of rolling "You can forgo rolling a skill check for that skill to instead receive a result of 10 + your proficiency bonus"), and mortal healing states "when you roll a success".
