상큼함이 톡톡 터지는 청포도를 넣은 샤를로트 케이크를 만들었어요~
요거트 무스와 함께 청포도 과육을 섞어 넣어 상큼함이 2배가 된 것 같아요~*^^*
또 자른 단면도 자연스럽게 그라데이션 되어 은은하고 예쁘네요~
요거트 무스와 청포도 과육의 맛이 섞여 새콤하면서도 달콤한 맛이 사랑스럽게 느껴지네요~
옆에 두른 비스퀴 시트가 케이크를 고급스럽게 정돈해주는 느낌이여서 샤를로트는 항상 예쁜 것 같아요~
윗면에는 휘핑한 생크림을 짜고 청포도를 잘라 올리니 싱그럽고 시원한 느낌이 들어 좋더라구요~

▶틀 사이즈 Mold size : 15cm x 7cm
▶재료
달걀노른자 2개
설탕 10g
바닐라익스트랙 2g
머랭 (달걀흰자 2개 + 설탕 40g)
박력분 50g
플레인 요거트 120g
설탕 60g
바닐라익스트랙 2g
판젤라틴 4g
50% 정도 휘핑한 생크림 240g
청포도 90g
설탕 10g
판젤라틴 2g
▶레시피
1. 달걀노른자, 설탕, 바닐라익스트랙을 섞은 뒤 머랭을 넣고 섞고 박력분을 체 쳐 넣고 섞는다.
2. 짤주머니에 담고 정사각형 오븐 팬과 원형 팬에 팬닝하고 슈가파우더를 2번 뿌린 뒤 190도 예열된 오븐에서 9분 정도 굽는다.
3. 15cm 원형 틀로 동그랗게 구운 시트를 찍어내고 정사각팬에 구운 시트는 가장자리를 잘라내고 크기를 맞춰 3등분으로 자른다.
4. 3등분한 시트를 틀 옆면에 두르고 동그란 시트를 바닥에 깐다.
5. 플레인 요거트, 설탕, 바닐라익스트랙을 섞고 녹인 판젤라틴을 넣고 섞은 뒤 50% 정도 휘핑한 생크림에 넣고 섞는다.
6. 무스를 다른 볼에 조금 옮겨 담아 둔다.
7. 껍질을 제거한 청포도와 설탕을 믹서기에 곱게 갈고 녹인 판젤라틴을 넣고 섞은 뒤 그린 식용색소를 조금 넣고 섞는다.
8. 덜어둔 무스에 (7)을 넣고 섞은 뒤 틀에 하얀 무스와 번갈아 가며 붓고 냉장실에서 1시간 정도 굳힌다.
9. 조금 남은 청포도 무스를 윗면에 붓고 평평히 한 뒤 냉장실에서 2시간 정도 굳힌다.

10g Sugar
2g Vanilla extract
Meringue (2 egg whites + 40g sugar)
50g Cake flour
120g Plain Yogurt
60g Sugar
2g Vanilla extract
4g Gelatin sheet (or 3g Powdered gelatin)
240g Whipped cream (whipped 50%)
90g Green grape
10g Sugar
2g Gelatin sheet (or Powdered gelatin)
