I have made this cake around 10 times, and it has turned out perfect every single time. You can blindly go for it. I swear. It is the best and easiest cake sponge recipe. One tip is that you can put the sponge in plastic wrap and freeze it for around five hours and then, use cream or gnash on it. This will make the sponge even more moist and fluffy. Hi...I tired the cake thrice...no doubt it turns very spongy....but a thick layer remains at the bottom which is elastic kind of rather it cannot b eaten
nazima shaik I think that’s because of the coffee ...don’t use hot coffee ...it can be slightly warm ...try to pour from a corner little by little and keep folding to the batter ...else it will simply settle down ....and if it batter looks too thin then don’t add all of it add until gets to consistency of the batter . Sometimes depending on the size of the eggs the batter will be thin,then we can adjust the measure of the coffee .

Hey Dianne, tried the same cake but when i tried making rossette i wasnt able to with the whipped ganache, even tried chilling it but the design wasn't holding.. but with just whipped cream i usually get good rossettes on my cakes

I tried this....i didnt have that hand mixer so i mixed the eggs by hand and did everything you did in the vid..after adding dry ingredients it became so liquidus so i added some more flour.(ps- i have made cakes many times so don't say it was my mistake) Now, the cake is in the oven. 3/5 (rating) m not gonna try that frosting bcz that too needs hand mixer. I will buy it from the market. I will edit this within one or two hours. Thanks Edit- it was so swollen in the centre. The sides were less swollen Tastes 9/10 Thanks again😗
Hi Usha, That’s an honest feedback .😊 First thing , for this sponge electric blender is required for the eggs ,if not the sponge won’t be spongy and soft. You said the batter was thin ,in that case you next time reduce the amount of coffee. I am glad you tried the recipe 😊 And for the frosting , this can be done without a blender as well , use 1:1 ration of cream and chocolate and keep in fridge for just 15 mins till they are semi set and use then directly (just in case you would like to try next time )😊

You can make the cake and store in fridge for overnight ...but keep it covered or keep inside the cake box ...and take it out before 30 mins of cutting so it will become soft again .

Hi Nikitha, Make the sponge ,clean wrap it and keep outside for 3 days , it will stay good . If want to store for longer then need to cover and store in fridge not freezer upto 1week. As this recipe doesn’t have any milk or milk content in it ,it will stay good for 3days outside , but cover it proper. No need to refrigerate cake before icing , this is chocolate sponge and may turn dry if kept for long time , So better make and use within 2 or 3 days 😊

Did it turn out good with four eggs ? Usually i add 2 eggs for 1 cup of AP flour but when used three eggs the cake turned out hard.

Yes, this cake can be decorated and stored the day before but in the fridge inside a container or a cake box .
Else the cake may get little dry 😊

I used the same leftover ganache for it .
If your ganache was thin then Next time use 1:2 ratio ,1 part cream and 2 part chocolate.

Any alternative if I don’t have the parchment or butter paper.
Grease the tin with butter/oil and dust with cocoa powder/all purpose flour and
keep the tin in fridge for 15 mins and then pour the batter .
You can use normal paper and apply oil on paper your parchment paper is ready

essence is basically for the smell only.
I was looking for some inspiration for cake decoration but most of the cakes have toppings which are difficult to find in Indian market but when I saw this on Pinterest, I was impressed because most of them will be readily available except for the chocolate balls and pearls, for which we need to do some online shopping or go to an outlet where we can find bakery stuff. I first thought that this video was shot in another country but while watching the video I realised that you're an Indian, don't know if you live abroad but your video instantly gave me confidence to decorate my cake with the available toppings with ease!! Make the sponge ,clean wrap it and keep outside for 3 days , it will stay good .
If want to store for longer then need to cover and store in fridge not freezer upto 1week.
As this recipe doesn’t have any milk or milk content in it ,it will stay good for 3days outside , but cover it proper.
No need to refrigerate cake before icing , this is chocolate sponge and may turn dry if kept for long time ,
So better make and use within 2 or 3 days 😊
