wow, I'm from Alaska and we pickle our salmon the same way, except we preserve our salmon in salt first and when we're ready to pickle we soak the salmon in water and rehydrate it. wild alaskan salmon is so delicious, we usually make pickled salmon for special occasions or memorial feasts since our salmon has to last us 7 or 8 months before we can get more. greetings from Alaska bubbe!

It is much easier and faster to skin salmon with skin side down and slide the knife over the inside of the skin.
