A regent is not limited to an adult ruling in place of a child. George IV was regent for the last 10 years of George III's reign.

One correction- in terms of coins and banknotes. Its likely that the coins bearing the image of Queen Elizabeth will be in circulation for decades. Prior to decimalisation in the 1971 there were still coins in circulation bearing the image of Queen Victoria and King William IV albeit it was much more common to find coinage of the more recent Kings and Queen.
So its entirely likely we will still find coins of Elizabeth II well into the reign of the Prince George or his children.
Banknotes they will slowly be recyled in about 20 years, and commemorative stamps (ie those special edition stamps like of dogs and the red arrows which bear the silhouette of the late Queen) will still be in use until the run out and end up in folks stamp collections.

Charles held the dukedoms of Cornwall and Rothesay throughout his time as the Prince of Wales and William holds all three now. William's honorary title of Duke of Cambridge was bestowed when he married and not held by the previous princes of Wales so it will most likely not be bestowed on George.
William is still Duke of Cambridge if he was to die before his father George would inherit that title plus the Earldom of Strathearn and the Barony of Carrickfergus but not William's other titles whivh are reserved for the eldest son of the monarch though the king could create him Prince of Wales and Earl of Chester as George II did for his grandson
