I just made this recipe in a caserole dish for lunch for my husband . It was a big hit. We are not allowed soy or nuts so I used white beans instead of tofu. I added smoked paprika, broccoli and chives to it and browned the top to a crisp. I baked it on a higher temp bc it needed it but all in all I see why it's your go to! I think I may add some nutritional yeast to the top for added yumminess.
Oh wow! Ya know what would be great on that? A combo topper of your onion rings/blooming onion. Sliced onions instead of rings laid all over the top. Yum!
This recipe is a KEEPER...! I like adding onions and diced pickled jalapenos. This is soooo good in a way I just cannot explain or express. Funny how easy it is to forget that cashews are NOT nuts (and neither are peanuts)!

Another GREAT recipe,I didn’t have cashews so I used Costco’s pistachios and for tofu I used Lima beans,I added 1 t. Smoked paprika ,2T. Nutritional yeast and some dried parsley. Hubby added a bit of salt. NICE that you kept the skins. You have great ideas. So GLAD I found you.😀😀
I am making it right now. I did the white beans because I only had the firm tofu. I added Broccoli. I took a bite of the mix before the final cook, and it is excellent!

Here in Germany the next big feast is Christmas Eve and our family tradition is to have a rice dish for that Then on Christmas Day we have (technically and practically) a reheated meal with sides So I will definitely by doing this as our potato side
I finally got around to making this and it was SO GOOD! How can something so simple be so good? The only change I made was to use white wine vinegar instead of the apple cider vinegar (and used the silken tofu/white bean combo). I used it as my main meal with some veggie soup to start, and it was very filling and satisfying. Thanks for this, Brittany!

Hi Brittany, I made this tonight to try before Thanksgiving, WOW, my non vegan husband had two big servings! It will be on our table for sure on Thanksgiving day! I dry sautéed half a small onion diced and 10 mushrooms diced and mixed them in before adding the sauce. Ive never heard of potato casserole and I grew up in Ohio. The closest one dish meal I make with potatoes is a pot pie using cubed potatoes and left over veggies with a similar sauce mix. I used to buy pie shells and put it into those, but recently changed to a more healthful composite. This would be a great, moist side dish. I find baked, broiled, steamed potatoes so dry which screams for a load of butter...THIS recipe would definitely change that!!!
My favorite thing to do is take your sour cream recipe add one cup of my favorite salsa and two tablespoons of taco seasoning. Best Taco dressing ever! If I told you this before I apologize but it’s soooooooo good!

I think it would work with any tofu since it's blended smooth. I feel silken has an odd slimy texture and I stopped using it for dips and dressings. Firm works just fine. Love this recipe!!
I made this and it is SO good. I did need to add 2 T plant milk to get it to blend in the Vitamix. I always like to rinse, soak and then rinse my cashews again before using. I think this sauce would be great for veggies, a dip, and a lot more, just by tweaking some spices. I love smokey paprika, so that'll likely be in my next batch. Would the sauce keep in a jar in the fridge for a week?

I made this yesterday....my vitamix had a hard time blending the tofu and cashews without any liquid....I ended up adding some water but there were still chunks of cashews. So the casserole was not smooth it was like mashed potatoes with nuts. Did I mess up somewhere? Thanks
I find that if you soak the cashews in hot water until they’re soft, then they blend beautifully in the Vitamix. I tried blending them completely raw and they did not blend well.

Yes you can sub it for white beans or hemp hearts or use all silken tofu!
This is a definite yes. I have 3 big potatoes in the fridge. Would that be okay or should I nuke them for a few minutes to soften them up?
I would just warm them up a little bit to help soften them.
