When the owners passed away and the restaurant got sold, everyone wanted the recipe for the sauce, and people who worked there said the sauce was onions, tomato paste and water, and nobody believed them, but I tried making it, and it's pretty close. Tomato paste is pretty powerful, awesome stuff.
Does it make a big different with or without the vodka? Vodka doesn't have much flavor to begin with, and since we are cooking away the alcohol, does the vodka makes any difference to the flavor?
Yes, it actually does. Make sure your reducing the vodka enough, it sorta concentrates the sugars in the alcohol and helps bring out the flavor of the tomato. You could totally leave it out, but your just making like a rossato tomato sauce. Just like a creamy tomato sauce. Which is totally cool when you don't have vodka and don't wanna go get a bottle. You could conceivable replace it with any alcohol that has a high sugar content.
Made this for Christmas with homemade gnocchi instead of rigatoni. It was a HUGE success. The sauce doesn't separate. The cream blends in nicely, which hasn't always been my experience. Thank you for sharing this, Molly.

Just made a vegan version of this and it turned out so tasty!!!! Almond milk instead of heavy cream and 2oz nutritional yeast+ 2oz of dairy free yogurt instead of the 4oz of parm! I love these vids and it's so fun figuring out a version that works for me!

This was delicious! I browned italian turkey sausage and reserved until the end, a bag of diced frozen butternut squash before the tomato paste, and then a bag of frozen spinach at the end to get some meat and veggies in it. STILL AWESOME!!! Will definitely be making this again
This video popped up on my feed. I got hungry and went to the kitchen to make it. I realized I only had some of the ingredients and just improvised. Didn't have parm, onion or garlic, or 1/2 & 1/2. Oil, garlic powder, onion powder went in with tomato paste. Cooked it down added the vodka. I had yogurt... that's dairy, right? Added 3/4 cup hot water, whisked it down and added a little bit of flour to thicken it. Added pasta water as needed to thin it down a bit and then added some cream cheese. This honestly tastes amazing. 😂😂😂 Bon Appétit .

He was barely eating, just sleeping or laying in bed all day, and wouldn't communicate what was wrong to me. I was worried about him. After about a week, when I was seriously concerned that he wasn't getting enough food, I decided to make this for dinner. It was one of his favorites in the past. He came out of our room while I was making it and sat down at the table. I served him a bowl, didn't ask any questions, just served him a bowl. He got up for seconds. and thirds. The next day he got up more. And we talked. It wasn't fixed in a day, but it started off with a few bowls of pasta.
Just made this and it turned out great! Definitely needs more heat, so I'm gonna double the red pepper flakes next time hehe. Thanks for another awesome recipe!
Another thing, the original Penne alla Vodka pasta, did use Panna, which is UHT double cream-ish and didn’t use paste but regular passata, and it also had shrimps. It was a popular dish back in the 80s, but hard to find a restaurant that does that dish anymore in Italy. Still, a great pasta dish
