Here in Malaysia,we use rice flour... added with a bit of sugar and salt...a pinch of limestone paste( we called it as Kapur sireh).....mix all of them... remember to add some water... drinking water will do...but not too much...the mixture must be thick...so that it'll stick to the banana when you dip your banana into it...
We do have a ready made flour by the brand called 'Adabi' ...it's a very famous local brand here...you can just simply add water to the flour...and start dipping your banana into it...then fry your banana...

I love the process of flattening the bananas. In the Philippines, there is a version of this called, MARUYA.
What does it mean in english? In Indonesia and malaysia it's called "Pisang Goreng" or simply fried banana

my guess is high heat to set the shape and a lower heat to finish the cooking/make it properly crisp and golden brown
