    Hello! Thank you for the explanation. For Castillo variety (Colombia), would you recommend a natural, washed, or honey (red honey)? I lean more towards fruity coffee and don't like too much acidity... and for the specialty coffee I drink them as espresso...

      You just need to try them. I currently prefer washed coffees for the clarity but this is solely a personal choice.

    Beans are seeds and seeds are beans … but you don’t sow beans you sow seeds, unless you are sowing the seeds for beans in which case I guess you are sowing bean seeds…
    Or in the case of coffee sowing the seeds for beans which here you are saying coffee beans are really seeds

    Is there a coffee that starts off with the NATURAL PROCESS, and finishes with the HONEY PROCESS?
    Isn't a natural process coffee one that FERMENTS the outer skin of the coffee Bean?

      They are two different processes. Meanwhile, there is quite a variation of different fermenting processes that are being used including anaerobic fermentations, different yeast that is added to the coffees, carbonic maceration,.... A great ressourse to dive deeper is the book Green Coffee, that has been published about two years ago.
