I got curious about vermouth definition. I found in US: Vermouth is a type of aperitif wine compounded from grape wine, having the taste, aroma, and characteristics generally attributed to vermouth, and shall be so designated. 21 cfr 4.21(g)(2). But from EU: Vermouth Aromatised wine:-to which alcohol has been added, and -whose characteristic taste has been obtained by the use of appropriate substances of Artemisia species. Regulation (EU) No 251/2014 Annex II A. (3) So even in EU doesn't need to have wormwood, but some herb from that genus.
