    Have you ever thought about using the broccoli to make broccoli cheese soup…which can even be used to top baked potatoes with little bit of extra cheese and some canned or packaged fried onions as a topping. This way you get two meals out of it. Also, the kale could be cooked until tender, drained and moisture squeezed out of it to make a Spinach-Artichoke dip( hot type). This dip can be made with turnip greens, collard greens and spinach also. Serve with pita chips homemade or bought. Also good with tortilla chips if already have those. The carrots can also be made into a cream of carrot soup( which I put a little ginger in) so good on such cold days like we have been having. Serve with a small dollop of plain yogurt or sour cream and serve with some homemade crusty bread and a salad. Also, carrots make a wonderful small cake( 8x8) using crushed pineapple and grated carrots. If you have ingredients top with a cream cheese icing. This can even be made into cup cakes too. Everything I have mentioned can be frozen for when you need it or if you have leftovers. Carrots can also be peeled, diced and frozen for fried rice. The nuts can be turned into granola if you have oats. Also you can use these nuts to make hummus…if run out of nuts use peanut butter to make hummus out of. Anything you can add chicken broth too helps with colds( bone broth).If you dice up some celery, carrots, onion and add to butter before tossing it with rice will add wonderful flavor and more vegetables to your children’s diet. I call this my rice pilaf…if no nut allergies you can add some diced nuts in. Though my family likes it without any nuts. Have you ever tried rolling out your pie crust thinner ( pkg kind) using that as your bottom crust, then trimming excess to use on top of pot pie in lattice form. I think shredded carrots lend a better texture to cakes, muffins, carrot & raisin salads etc instead of a pot pie. Many children have issues with textures. Plus, I know you are not wanting to eat animal products, but it can add so much flavor and health benefits for young children.

      Thank you for all the wonderful ideas! I have never made cream of carrot, but that sounds delicious, especially with the ginger added. That's a good tip to stretch a pie crust and my family does love carrot cake with cream cheese frosting. I should make that again soon :-)

    I made salmon patties too. Delicious. I took one and chopped it up and added shrimp to make a seafood chowder (tomato based). Oh man it was so good.

    What is the brand of American, your currently useing it looks to have a nice melt

      I was comparing two types of American singles: Horizon Organic and Trader Joe's Organic. Had the family try them before cooking and they really didn't taste much difference - maybe the Trader Joe's brand was a little more flavorful. I looked at the video I took of the sandwiches and I didn't narrate, so I'm not sure which one is on that footage, but they both seemed equally melty :-)
