This looks delicious! My family always has squash casserole for Thanksgiving dinner, but we’ve modified it to use butternut squash instead of summer squash and no cheese. We use buttered Pepperidge Farms stuffing crumbs for the topping. It’s so good!

I wonder how caramelized onions would work as a variation. Since you have to sauté the onions separately anyway, taking that step up a notch to caramelizing might add an interesting richness. Earlier this year, one of the comments here pointed out the danger of non-stick spray ending up on the floor and causing a slip or fall. After reading that, I've been spraying it into a folded paper towel held over the sink, and then wiping the baking dish with the oiled paper towel instead of spraying the dish itself. In addition to being much safer, you end up using a lot less of the spray itself. It really doesn't take much spray to get the job done.

I make a similar squash casserole, but I use a can of cream of chicken soup instead of the cheese and top it with some Pepperidge Farm cornbread stuffing mix. I also put a layer of cornbread stuffing mix on the bottom with some melted butter. Sooo delicious! 😋😋😋
I am from Georgia and lived in Albany for a while. I wish Paula would make squash patties. Squash and onions boiled together, 1 egg, flour, bit of meal and milk. Gets it to pancake batter consistency fried in a pan with a little bit of oil. DELISH!

About the onions… When you cook the onions separately in a pan with butter the larger sugar in the onion will break down into smaller sugar molecules producing a sweeter taste. When this process is skipped the onions aren’t as sweet in the casserole. So there you have it!

You have to keep a close watch and stir frequently. Properly caramelized onions have a "jammy" texture. The good news is that caramelized onions can be made ahead of time, and refrigerated or frozen until ready to use. I have seen recipes for caramelizing onions in a slow cooker, but I have never tried that.

🚨🚨MRS. PAULA!!! I will be making this dish with one change that I think even you might like! I have started using crushed pork rinds as bread crumbs for EVERYTHING. It’s “out of this world!” and beyond. I used regular flavor pork rinds and crush them in the ninja blender. For this recipe I wouldn’t even douse them in butter (you could) but they don’t need it. They’re fat filled already and will crisp deliciously. Please try it! I would like to request you do a green bean casserole holiday recipe. My little 4 yr old girl, Wolfie and I enjoy the hoot out of your videos! Love from Dallas TX!

I made this but added 2 eggs scrambled and 1/2 cup mayo and 1/2 cup sourcream. Mixed eggs with mayo and sc I also added green bell pepper to the onions and cooked that together. Added diced ham and it made a good entree with the addition of the ham.

I cook alot and im still using the same paula pans and pots ( the red ones) I bought at K-mart about 10 yrs or more. I take good care of them. Only reason to buy any new ones is to change up the color scheme. I love her brand of pots and pans.

She talks about that when she shows how to make Southern dressing. She said she doesn't put stuffing in the turkey anymore, because it doesn't get hot enough in the inside turkey to cook it without the possibility of it being under done.

Paul I do a chicken and squash casserole that is out of this world. Boil or roast your chicken let it cool and cut up in to pieces Then cream of mushroom soup cream of chicken soup and sour cream mix it all together Spray a 9/13 baking dish Sprinkle the bottom with half a package of pepperidge farm dress Then your chicken mixture and then the other half of your stuffing melt butter and pour over top and bake at 350 for 45 minutes or until bubble and brown.

She talks about that when she shows how to make Southern dressing. She said she doesn't put stuffing in the turkey anymore, because it doesn't get hot enough in the inside turkey to cook it without the possibility of it being under done.

Paul I do a chicken and squash casserole that is out of this world.
Boil or roast your chicken let it cool
and cut up in to pieces
Then cream of mushroom soup
cream of chicken soup and sour cream mix it all together
Spray a 9/13 baking dish
Sprinkle the bottom with half a package of pepperidge farm dress
Then your chicken mixture and then the other half of your stuffing melt butter and pour over top and bake at 350 for 45 minutes or until bubble and brown.

Love squash, have only done it pan fried with butter salt n pepper though. I've got to try this!!
