It's important to remember... If you like your steak medium-rare, you really need to sear it quickly, and leave it almost rare inside in the first step of cooking the meat. This means a very hot pan, and the ability to work really quickly in turning-over the pieces. That way, when you 're-introduce' it to the pan later, you can THEN cook the meat to desired done-ness, and avoid OVER-cooking it, which is... really a shame to do. I also noticed that, when you acknowleged that there is a 'hotspot' in your pan, you should have showed viewers how to 'handle' that situation wisely -- which is to put your thickest and fattiest pieces of meat in that hotspot.

It really depends on the temp that you like your steak, I recommend a thermometer as some people like theirs well done , some people like it medium rare
If you cook it correctly it should be soft. I don't reccomend cooking with Teflon, use cast iron or stainless steel cause you have to cook on high. U want the steak to basically sear when it touches the pan. Only flip once Even once in the sause, you just coat and cook for maybe 5 mins or until it boils. Over cooking your steak is what makes your steak tough and chewy. Hope this helps 👍🏻
i can'ting bring myself to waste a ribeye steak like this, cubing it up us hard to watch. personal thing, i do something like this with ny strips, top Sirloin steaks, and sirloin steaks (there is a difference between the difference between the 2). the other difference is that i cube upotatoes in about 1' potatoes. so when i take out the steak i hrow them in and fry them up and once they are fork tender i throw the meat back in. i also cook a ny strip in this very same way only as a whole piecee of meat. and i use about 1/8 of the salt.. the difference between a top sirloin steak and a sirloin steak is the location of where they come from on the cow. both come from he bum of the cow. however, like the name suggests top sirloin come from the top comes from the top of the sirloin and is more tender. the sirloin comes from the bottom of the sirlon. i is a leaner piece of meat and herefore not as tender as other cuts of meat as it doesn't have he marbling or fat cap. it is generally used as a roast or in stews. but has great flavor in this recipe. just make sure you cut it up small so you can chew it. it makes for a very inexpensive great flavor meal for a family. s you can often find it on sale for less than a lb of hamburger. salt is NOT a seasoning. it"s a mineral. it doesn't add any extra flavoor as it cooks.salt is a natural preservative as it draws moistur out of meats, which it is great for putting a great sear on things. However you don't need massive amounts of it. It's also a levening agent for baking like when baking. and it's a flavor enhancer such a when used with chocolate or caramel. Otherwise salt should be left on the table so that people can add it to their food for heir own preferance and dietary needs. I know you see chefs add a lot in the beginning, but you will also notice that they also noice that they add it at the en for the right for just the right flavor. do the same. you will get the same result. with less chance of over salting.

then what can we do if we want to re-introduce the pieces to the pan later without overcook them (if i need them to stay medium-rare)?
@@sarasalameh4354 re-introduce them into a low-heat pan and check the inside of one piece to see how much more it needs to be cooked. simple.
Or melt the butter and toss the melted butter over the steak bites in a warm metal bowl. So that way you’re not putting the steak back on the stove

When steak goes on its medium high, can also be high (depends on the stove) the I lower it to a medium when I add the garlic & butter

Yes absolutely, you can use the dried rosemary as well, I wouldn’t recommend leaving it out completely as it adds a wonderful flavor
