There're no real crash physics. It's actually not what you think it is. Depending from which point the vehicle is hit and how hard it's hit, it triggers a pre-rendered video of how the bodyparts of the vehicle models deform (basically a slow motion video). The car switches from what you see before the video to what you see after the video. The damage that happens during those short cutscenes, doesn't really happen live. I hope i explained well.

There is no "soft body physics" like in BeamNG, but the crashes are still procedural in some way, because it happens in real time. It is not a pre-rendered video as you said.
It's a shame the remaster wasn't this good and all the cars were nerfed, would love to have the original physics with the color filters and ambience with all the DLC cars and island map. I know there's mods to restore the original billboards and street advertisements but I wish I didn't have to mod the game to make it better.
The difference between 1.0 and newer versions is that in this version the cars FLIP more rather than SLIDE. Can't understand why the cars were nerfed so much though. In the 1.0 release, they were twice as fast as the newer versions.

It does capture that certain "eerie" feel that the community has been trying to point out with the crashes, emtpy cars, and no people in the roads. I would say that music does have a huge impact on how everything feels overall, let alone how everything gets desaturated except for the color red whenever you crash to indicate danger or blood, and criterion knew exactly what they were doing yes sir. I do enjoy when games leave some things unexplained, it does keep me more interested, eventhough the developers never intended that the player would shift their focus to such simple things. I cannot describe why, but im sure alot would agree on that. However, after this 1.0 version, EA took over and decided that the game should be more user friendly, whatever that means. so they made the cars feel slower and they toned down the crashes so that they aren't as intense, the two factors that made the game stand out! 😿

I feel like the crumple texture is better in PBR but there’s no denying that the traffic cars take more damage in 1.0 and it’s more satisfying

Tbh 1.0 was a glimpse of what the game could've been if you compare it to earlier builds or e3's you'll see how it devolved over time.
