Lia, looks good and sounded like it taste good, not sure how it is in England, but here most rice does not need washing...so no worries.

      From the Uncle Ben's Website:
Should I rinse my rice before or after cooking?
UNCLE BEN'S® Brand Products do not have to be rinsed before or after cooking.

I use Better than Bullion in a jar instead of the dry stock cubes. It’s a concentrated stock paste and it is so good. It comes in lots of varieties including vegetable and garlic. Just passing it along in case anyone is interested! The soup looks so good, Lia. Thanks for sharing! 😋

I truly believe the passion you feel for the food imparts that flavor and passion to everyone who eats it. Never be afraid to share what you love. It's very special. Merry Christmas to you ❤. What a great video! I also enjoyed the song at the end too. I don't know if Brits have Instant Pots, but Americans and Canadians, this would be a great recipe to stuff the whole chicken in, add a cup of water and pressurize 6 minutes/pound of chicken. Then debone and follow Lia's recipe.

My first taste of Greek food was when my dad took us kids to eat at a Greek restaurant where we live near Detroit. He would order a sea bass with the head and eyeballs and everything and we would make him cover the face with a napkin. =0) We got avgolemono every time, and a dessert with custard and a honey syrup on top, Galataburiko? I know that's wrong. Anyway. I'm in my 60's now and my dad has been gone for over 20 years. But every time I eat Greek food, I think of him.

Hey my love! I cook this very often especially when we are not feeling well. I like to seperate the whites from the yolks and wisk till it looks like a meringue. Then add the yolks and the lemon juice and then the lukewarm broth. I like it this way because the soup has a more velvety and creamy texture. I think you will like it too! Well done for the recipe! Lots of love and happy holidays from Crete !

I came back to check out your recipes. I was watching you a year or so ago (must have been Christmas of 2020) when you were cooking and talking about vegetable recipes and some lasagna type dish. I forgot you call eggplant (what we call it) aubergine.
