Dimitra I have to tell you how grateful I am for posting this recipe. I haven’t had homemade avgolemeno since my mother has been battling Alzheimer’s. I have been cooking the Greek dishes I love so much as a kid. I made it like a yiayia. I needed this to feel better and realize how much I missed my mothers cooking. Thank you again.
I always loved spending the night or weekends at my Yiayia and Papou's house as a kid..this soup brings me back..waking up to fresh baked bread too..RIP to them both❤
My best friends mom would make this for me. They are Greek I am Croatian and never had it. I also LOVED when she made it with whole black bass(fish). That was my favorite ! Thanks so much!
So I've been wanting to make this for so long. I've never had it before even though we love Greek cuisine. My 14 year old daughter is home sick today so I thought this would be a wonderful cozy dinner to make for her, like a big hug! I found the recipe on your blog and then decided to also research on TH-cam and ironically this video popped up straight away and it was a sign that I needed to make your recipe. Thank you for sharing!
Unfortunately as a professional line cook that statement is not completely true. As with anything in cooking your ingredients and their quality dictates your end results. Their are plenty of high quality lemon juice brands that are for more then just cleaning.
@@nathanarbuckle3180 A line cook isn’t exactly a chef, sorry. No chef would use anything but fresh lemons. It does make a huge difference, regardless of the quality of the bottled stuff. It’s not that hard to cut and squeeze a few lemons. The quality of a dish depends on the quality of the ingredients.
This needs a hell of a lot more likes. Adding lemon for fresh flavour and using eggs to bind a soup is well underappreciated. My ex-girlfriend (who is Greek) left behind some amazing recipes and tips. Like how to make fresh easy pita bread for gyros (and adding the right vegetables for flavour!), that you need to squeeze cucumber for intenser, not-watery flavour of your tzaziki, use fresh herbs as vegetables (fresh dille especially!), bake oyster mushrooms like you'd do with a decent steak to eliminate meat to your diet, or how to prepare complete animal product so to not waste any product, like what you'd do with eastern goat stew. And above all, without spending a lot of time in the kitchen to make everything taste heavinly. Greek cuisine is cooking made easy and fun, pragmatic, but still by using all kinds of fresh ingredients. Absolutely love it. This soup is well within my top three of recipes, so thanks for sharing your tips! I used the second and "to-the-go"-version of avgolemono soup before, but now I'm definitely trying the second version with seperated eggs!
I am making this today. I love lemon and creamy soups. Thank you for linking straight to the recipe.... so that I don't have to search for it. Love the recipe layout as well.
An excellent soup! My dearest friend's Papou was the best and he added dill. Yours looks just as delicious can't wait to make it, Thank you, Dimitria!!
My yiayia made wonderful avgolemono! She taught me to separate the eggs, whip the white to stiff peaks, fold in the yolks and lemon juice before tempering. It makes a rich but light, almost sensuous texture. Have you ever had it that way? She always used orzo, like you!
So gunna try this. Greek restaurant I use to live by made this every Saturday. I moved to like the middle of Nowhere missed my Saturday soup so now I’ll be making it myself thanks to you ❤️ pairing with some garlic bread 😍
Thank you! My kids loved it it’s my favourite soup but I’ve never been able to make it as good as I did tonight with your recipe. White pepper and lemon!
God bless you, I can’t wait to make this!!! You explain your recipes so well, I like the way you have everything prepared and have quick delicious old fashion recipes! I will be trying this!
My mom would make avgolemono everytime we were sick and sometimes when we had leftover chicken. Our recipe is more like congee where it's just rice, chicken, the eggwhites and yolks and salt and pepper. Either way the softness of the chicken and rice is amazing but the lemon is really what shines in avgolemono.
excellent,simple... I find from my experience that once the egg mixture is tempered and added back to the soup, this mixture should not be boiled as it can break. Your joy into your cooking is compelling!! Thanks so much
Just like my mum used to make it except for the carrots, but this could be a regional thing around Greece'.. . brings back alot of memories. Great detailed presentation thank you..
I made this soup today and it came out amazing! I went with the egg yolk only open, but with rice...forgot to buy orzo!! Didn't matter, was so delicious! Thank you!!
So I made this soup 🥣 today. I did the one with egg yolks and orzo and man this was so delicious I literally had 3 bowls of it. Thank you so much 😊. I love your recipes
Looks good. I appreciate that you say that this is your way of making it. We don’t bother to separate the yokes and whites and we don’t put carrots in either but we have always had really thick soup from the standard recipe. Each island 🏝 does make it a little different but it is a very traditional Greek soup.
I am very happy tonight, thanks to Dimitra! In the past, I have not been too good at this dish (think scrambled eggs). Tonight I followed her instructions exactly, and BINGO! It turned our perfect :) Thank you Dimitra, evlogimeni.
Made this a few days ago and it turned out fantastic. Thanks for the recipe, will be nice to have an alternative to normal chicken noodle soup to keep things fresh.
You need to beat the egg white like a merang on sugar then add the egg yoke beat to combine then add lemon juice and some if the hot stock to temper the eggs before adding to the soup and cooked rice then its fluffy and creamy😊 salt and pepper to taste
Mmm oh my gosh! There’s a Greek restaurant in town where they always had this with crusty bread. Of course, eating out was (and still is) a luxury. I could totally order just this soup now with one of those ordering apps, but I think I’ll try my hand at cooking my very own batch!
Great recipes always and very well explans I always enjoy cooking this avgolemone soup with you and I succed always , my family love it so much😊 a very healthy and delicious soup👌👌👌👌
Dimitra, can you do a video making Youvarlakia? It's a great comfort food, great for winter, and also very easy to make, once the meatballs are done, cooking doesn't take long either.
@@DimitrasDishes A very close friend of mine who lives in the US shared one of your videos and tagged me as I'm Greek American living back in Greece. She recently posted pics of food from three of your recipes & sounds excited planning to do moussaka next. I just know she'd like Youvarlakia as she likes hearty soups...I can give her the recipe but I know she's enjoying your videos. :)
Hi. I would like to know if you wash the chicken before putting it to boil? Cause some say not to wash it any more cause when washing in sink, n’activant spread. And my second question is the rice. Now they usually say to wash rice in cold water before cooking it. Do you do these 2 steps? Thx much.
This is well explained. I make this one a lot. But I don’t put the meat in to boil because it becomes too tough. For me anyway. You did a great job on this. People are very intimidated by Avgolemono, but, once you get the hang of it, it gets easy. :)
Neither of my Yiayias' added carrots to the final presentation... They did, however, use a "mirapoua" when making the broth ... Recently I started adding Quinoa to the orzo -- it thickens up the soup nicely... Let me know if you try it (FYI... I also add it to my Giourvalakia)
My mom used to make this amazing egg-lemon chicken soup when I was a kid. This week I watched your video and I made the soup with 3 egg yolks instead of a whole egg. What a difference it made!

I'm so sorry to hear about your mom. My wonderful MIL who was like a mom to me had Alzheimer's so I understand how you are feeling.
Feel the same way about my Dad same situation so glad to find comfort in amazing foods they loved and we ate as kids!!!
Word respect

I finally made this. It's sooo easy. It reminds me of my Greek American friend, Zoe, and her mom, who we all called YiaYia. Great memories. Thank you!
I have never tried Greek food, but I’m determined, with the help of this creator, to learn a few dishes.

I used to eat this soup at a wonderful Greek restaurant, and it was always so comforting and delicious! Thank you for this recipe!
Finally someone who has so accurately described bottled lemon juice: "it's good for cleaning, not for consumption".
Hahaha exactly !

Oh Lord, that stuff is gross. Only fresh lemons!!

Brought back so many wonderful memories!! My aunt and uncle would make this soup and we loved it so much. Thank you!
Glad to see you added turmeric. It deepens the color and flavor of the soup without overpowering it, because the lemon brightens everything up.
Dimitra's Avgolemono Soup is MY FAVE!!!!! Thanks girl this soup tastes just like i had in Greece. 🥰
These recipes are wonderful! My sisters mother in law was from Greece and she made this all the time....so good!! Miss her.

Sooo delicious! I made it the other day twice since my family will not miss this soup on the table, especially in cold weather. Thank you!
Best soup ever! Thank you! In Romania we have something similar called Ciorba Radauteana, bur with sour cream, garlic and no rice or orzo.
That sounds delicious. You should make a video making that
Making this for the third time and coming back to your channel for reference. Thanks for a great recipe. ❤
