This is not Tipsy cake or Russian slice/Russian Log as it is called in other places on our islands. It is baked sponge sandwiched cake with leftover cakes or leftover sponge or both sponge and cakes, mushed together with booze and butter. Jam is normally spread over the base sponge before the filling is put on. Then the top sponge layer. Finished off with a pink fondant icing layer and chocolate feathered through the fondant. There’s a chap called ‘the Irish Baker’ who makes it exemplarily on a TH-cam video.
