I live in Springfield, Mo and eat at Leong’s Restaurant often. I made this recipe tonight and it was awesome. Tastes pretty close to Leong’s. I will definitely make this again.

@@LessTalkMoreDelicious It was a dish popular near Tulsa, OK. It has since gone away. There is a place in Tulsa named Asian Fusion that serves it but is slightly different than what I grew up with. Asian Fusion serves Springfield Cashew Chicken. Rumor has it that the two dishes have similar origins.
Hong Kong Inn in Springfield, Mo. It was a small diner on Glenstone, now they have a couple of restaurants. I've been trying to emulate their cashew chicken forever. I go every time I'm back. Also trying to duplicate their crab rangoon.

Yes, there was plenty of fresh hot white rice eaten with this ;)
My fave thing about cashew chicken is the celery,carrots,onions.
