Still up to this day all the classical genres of Middle East has this instrument as a core part of their existence. Its favoured for its flexibility when it comes to changing scales within compositions. Its in the same family as Greek Harps and Persian Santurs, its basically an harp built on a resonating wooden hull body with a lot of vibrato and pitch pieces, it meets the need of a guitar & piano mix within Middle Eastern Classical Music. If you were to listen to either Turkish , Persian or Arabic Classical music of today, you'll hear %90 of the time. The string instrument is kanun or Qanun... and the other one is clarinet as you said. However, since the scales and intervals are different than the Western Music, the instruments adopted to classical turkish music need a modification either its frets or playing technique... sometimes both... you can eaisly understand this situation in violin for instance... the playing technique is different in east and west music for violin... in addition turkish music has 24 non-equal intervals literally in one octave. That's why you see so many pitches on kanun. I recommend you a contemporary experiment on guitar called "microtonal guitar" by tolgahan çoğulu. You may react the song of him "yine mi çiçek"
