Chayote Squash Subzi | Show Me The Curry Indian Vegetarian Recipe

  • Chayote Squash is one that we tend to overlook but next time, think again. This one like most from squash family, has high water content besides being high in Vitamins C and B. We love the fact that it can be had raw or cooked, so it is a quick one to stir up on days when there is not a lot of time for cooking. It is a fall vegetable (even though we see it through out the year) and is available in abundance at great prices right now. Enjoy!

    In Mauritius it is called chouchou. We make salad with it...dice, boiled and then add dizzzle of olive oil, vinegar, salt, pepper, onion and green chilli. We also cook into as gratin chouchou that is boiling and add it to a bechamel sauce, layer of cheese and topping with breadcrumbs and grilled in oven. We also cook it a Masala curry. There also other recipes.

    It is always pleasure to watch you program and I enjoying making new thing in my kitchen .But I have not try this one.

    A suggestion. Add the dals first to the oil till it turns brown and then add the mustard seeds and dry chillies. This is a South Indian curry recipe which is eaten as an accompaniment with Sambar or Rasam rice.

    It looks great. I'm a fan of Indian food and always looking for new recipes. It would help if you gave a written list of ingredients as I am not familiar with all those spices.

      Here's the stuff before the chayote::
      * mustard seeds
      * dried red chili peppers
      * curry leaves
      * hing (www.npr.org/sections/thesalt/2016/06/22/482779599/meet-hing-the-secret-weapon-spice-of-indian-cuisine)
      * Chana dal (dried chickpeas)
      * urud dal (black lentils)
      * tumeric powder
      * green chilis

    lozzz😃 i always noticed that vegetable in our local mandi bt never thought of cooking it. after watching this recipe by you girls i actually bought it today and the sabzi wala addressed this vege as lokku!! lets see how it tastes as am planning to cook it tonight.

      +Payal Suri : Ha ha ha...that is a cute name for it. In India, my subziwala called it chow chow, I guess a derivative of cho-cho, in a lot of other Asian countries.

    I tried to prepare "Chaote Squash Sabji" following your instructions and it came out admirably satisfactory. It is not the Bengali way of preparation.But it is fine. Thank you.

    I discovered this squash last year at my local Safeway. Then it was priced 2/$1 so I thought I'd try one. I learned quickly that it needed to be peeled but other than that could be used pretty much like a zucchini. Thanks for the recipe. Prior to your recipe, I have not found much info on this vegetable. Though it must have gotten more popular because now its priced at $.99.

    to day I manage to get the chow chow after 70 mins drive, and I used to make joke ike marry me , are you interested etc etc.
    I forget your site to learn how to cook the chayot.. thank god I found it now

    If you get you hands on one let it sit on the counter until it makes a shoot, plant it, it is easy to grow. Very productive plant. 🤓

      ***** sure! You can make stuff them. Just boil them for a bit (after peeling them) until they've soften a little, make a hole in the centre and then you put ham in little cubes, pepper, salt, chopped onions and tomatoes and the rest of the chatoye (the one you scraped out). And then you mix sour cream with chipotle and garnish them with that. Add coriander to it.
      Another way is to make it a cream. For that you gotta peel 3-4 chayotes, then cook until they're very soft, cut them into cubes and put them in the blender with 3 spoons of flour, salt, garlic, about 1 1/2 lt of milk and then cook this with some butter, fried onion and coriander for about 10 mins until it reduces.
      I've even heard of sweet chayote pie!

    The thing i dont like about indian recipes is they have so much spices to add. if you want to make one dish, you end up buying after of the spice aisle
