Load it in one line at a time onto the display. When you want to scroll you load it in again starting from the next line, etc. Hard to give advice without seeing your code. This type of question is best discussed in the Arduino forume (forum.arduino.cc/) where you can publish code and there are more people to answer.

How do you make a 32 x 32 Pixel Image displayed on the 32 x 8 Matrix LED Module by sliding it up???

Intensity setting is by MAX7219 chip, so it is not possible to do one individual LED.
