Cool bike! To be safe, you might want to add fuel stabilizer and run the bike a little before draining the fuel so that any fuel left behind will not gunk up or corrode the fuel system. That would be my biggest concern with such a long storage period. Out of curiosity, why will you be storing it for five years? The brake fluid should be fine, and the oil (if clean) shouldn't cause a problem either. I hope everything goes well!
I currently live in Wisconsin, but i go on vacation to AZ once a year for about 3 weeks. Im thinking of buying a decent honda bike for around town riding for when i go to AZ. Would it be safe to keep it "winterized" for an entire year, or would that cause substantial damage?
I don't think winterizing for a year would damage anything as long as you keep it in a safe place away from moisture and rodents. I would also do a thorough inspection before riding it again.

I would remove the battery and drain the gas. And expect to replace the tires before riding again. Thanks for watching!
