My wife is a head chef in Toronto. She's from a family of Thai chefs, specialized in southern Thai cuisine but knowledgeable of the cuisine from north to south from east to west. I was delighted to see this post and sent it to her (in the next room) for her enjoyment. Everything you mentioned, I have had the joy of tasting. Where this theme could expand is with those secret corners and single chefs who do something spectacular with the popular dishes. Like the way grandma cooks. The omelette is one of my favourites. As you say, it goes with everything as a side dish. In fact the omelette and fresh steamed rice is my life saver in Thailand. Then there is this pad Thai on the walking street in old Chiang Mai. OMG. This is heaven. Thanks for a great overview. Aoy just got home with some pad krapow gai from her workplace. Am I blessed? dcb

Me and my wife use to have a Thai restaurant ( Mai Thai ) in Austin. Gone now we lost our lease. She is Isan and a master at most of these dishes. She feeds me the best Thai foods everyday. You have some great picks Paddy. I think We won best restaurant like four years in a row. Everyone loved her foods. My included. Great Video Paddy. Hope you get back into gear soon. Starting to miss those video.

I wish you both can find the new location for your restaurant. Your wife’s talents and your lifetime effort must not be wasted. You can make so many people happy and forget every stress when they come to your restaurant and have the best time of the month or even life!!

@@jomontanee Event thought we loved the restaurant it was devastating when we could not renew our lease. We have no desire to do it again unless we own the property. We have moved on. She is now doing Thai massage and I have fun with my TH-cam channels making videos. Just wish I made money from doing it. Thanks a lot

What I love about Thai food is, that you can order the same dish but it always tastes slightly different, as each person adds their own twist to it!

Thank you for sharing just a tiny piece of Thai cuisine with us. I always enjoy watching your channel, especially the food parts.
On another subject, you may want to consider showcasing:
    1. The best roads
    2. Best convenience stops
    3. Gas stations and what to expect - things that are same or different from other countries
    4. Best national parks
    5. Best river spots to visit and to bathe in
Using all the content you have created you can get so much more than what you are currently 'milking' 👍🏼

Fantastic list for people wondering what to eat when they visit Thailand. Another "Best" food topic could be desserts. I love finishing a meal with mango and sticky rice. The best sticky rice I've had was infused with pandan juice served at a seafood restaurant in Samut Prakan.

My favourite Thai dishes in no particular order are pad kaprow with chicken basil and rice, green papaya salad, Tom yum soup, raw prawn salad, seafood ceviches, oyster omelettes, Thai sausage rolls, betel leaves for snacks, spicy riverbed fish, boat noodles etc.
P.S. can you do a video with the Michelin starred restaurants and chefs like David Thompson for Nahm and more?

Paddy, I would suggest you to try Larp dishes which are available in North and North eastern parts of Thailand. They can be fish, pork and beef. Also, try Nam-prig or น้ำพริก dishes which are widely common all over in the country. However, there are many kinds of Nam-prick dishes.

Fascinating as always. And this video was also delicious. Pad Gra Pow is always my go-to dish when I am looking for quick, cheap, easy to order dishes when I am on the move in Thailand. But my favorites are Khao Soi and the Tom Kha Gai soup. Always ordered phet mak. With mango and sticky rice for dessert, and a glass of Thai ice tea. When I was in Washington, D.C. last month I ordered Khao Soi in a Thai restaurant. While you can buy it on the street in Chiang Mai for 40 baht, in this U.S. restaurant it was $15.00. So sad. I want to go back to Thailand so bad and stuff my face with 40 baht Kao Soi.

Normally Tom Kha Gai is not supposed to be spicy. Thai people like to cook this dish for children. It’s like a kids version Tom Yum and normally you can eat everything in Tom Kha. The reason I can think of is the restaurant not using ingredients that supposed to such as galangal it must be the young galangal only that’s why it’s called Tom Kha (Kha=galangal) if you use too old kha of course it’s not easy to eat but actually if you have a strong jaw everything in that dish is eatable.
