    I did the salt-crusted beef tenderloin for my family lunch today, at January 1st 2022. It was amazing! I served it together with a lovely mushroom gravy which was purposedly left slightly undersalted since, as the chef mentioned in the video, the beef ends up very well seasoned. Together with mashed potatoes, this was plate-licking good! Thanks chef John and Food Wishes and happy new year!

    I am so ready to try the Pig in a Pumpkin, which I know will be as delicious as Chef John said, and I would love to know if this is a west African - inspired recipe. More than 30 years ago, I was at a dinner hosted by a woman who had been in Sierra Leone for a few years, teaching through an American volunteer program, I think. She served a similar dish she'd learned to make there - a stew of chicken and tomatoes baked in a pumpkin, which she served with rice on the side. I don't remember if she removed the skin and the bones from the chicken and cut the meat into chunks, or if she managed to fit whole parts of a cut-up chicken inside the pumpkin. I also wish I knew what seasonings she used other than the obvious garlic because It. Was. Incredible. That was when I learned how beautifully squash or pumpkin pairs with tomatoes, and how the savoriness of the meat balances so well with the sweetness of the gourd. I wouldn't be surprised if chicken or beef would be a perfectly good subsitute for pork in Chef John's recipe.

    I traditionally roast a goose for Xmas. I put a layer of whole new potatoes or Yukon gold potatoes cut into large pieces in the pan under the bird so they cook in the drippings.

    It has been a little rough going without Chef John. Really not sure why but when your life is basically emploding, a little Chef John goes a long way. Watching this made me feel better. Thank you. Still don't know why it helps but it does. Anyone have any ideas.

    Bless you, John! Pork tenderloin is one of my all-time faves, and this treatment you show here looks amazing! And it just so happens that I have a lovely one in my freezer ... I'll just have to substitute some other nut for the walnuts (pecans usually sub-in well), because dying has a way of ruining my dining experience ;)

    This looks really good! I actually own both the tiny torch (butane) for Creme Brulee, and the regular propane torch for something like this. Oh, and sweating/soldering copper pipes! Both are self-starting. Yay!

    Hey Chef John- I Luckily watched your Baked Ham video before Christmas and I took your advice! Which was to throw out the Yucky Glaze Packet that came with it- And, even though it wasn’t the more expensive roast, like yours was, by making my own Glaze, it came out to be THE Best Baked Ham that I’ve Ever Made!! And after 25 years of making Christmas Ham, Thanks to You Chef John, I Definitely felt Victorious!! I also wanted to add that I REALLY Enjoy watching All of Your Videos! And Not just Bc I learn some great techniques, recipes, and ideas- But Bc I find them Incredibly Relaxing- Not to mention that I enjoy your Witt, Tone, and The Cadence of your voice- Anyways, I Hope that You and Your Family had a Wonderful Holiday!     OK, crusting the tenderloin with salt, resulting in Uber moist meat, blows my mind. Salt usually draws moisture out... how does this even work? Clearly it does. Mind blowing 🤯.

      Salt changes the molecular structure of protein to make it more absorbent.

      Osmosis, baby! Salt draws out moisture from the meat, but also the air. But because the water on the outside is now saltier, it gets pulled back into the meat again, plus the little bit of free air moisture it picked up earlier. Look up "dry brining" for more details.

      I’m think the egg white + salt helped seal it some so that the juices stayed within the meat. I didn’t look like much went into the salt pan.

    Some day, I will try this pork tenderloin but with stuffing of chopped mushrooms and onion chopped finely. I don't like the idea of nuts with meat

      Nuts actually go very well with pork. Pigs raised naturally, will eat a lot of nuts and the meat can have a bit of nuttiness.

    One option would be to CAREFULLY de-bone the breast but then still cook the breast with the bones in place. Aside from a slight disconnection of tissues and some additional paths for the juices to escape the breast, this should be a satisfying medium between this Turkey Breast recipe with bone in and a bone-out breast recipe that retains a good deal of the bone-in recipe but with the ease of carving of the bone-out recipe.
    I'll put this experiment on my YT video to create list.

    I still prefer the "Boned and Butterflied" turkey cooking method. It cooks quick, looks gorgeous and the meat is always perfectly cooked and moist. Plus its super easy to carve.

    Chef John, don't apologize for the sauce with the Pig in a Pumpkin! It's not grainy, it's RUSTIC! I do have a question about seasonings and sauces, though, and it's related to a comment I made earlier. I think either beef or chicken would be equally good in this dish. Would you season them differently, and add different liquids for the sauce?

    What would be a good substitute for pork loin on the last recipe. The bacon is fine, I just don't like big pieces of pork.
