    Logan is awesome. I was watching a random BBQ show where Logan was competing and he was making people with tons of BBQ experience look bad. Just completely unfair. He is at the forefront of combing classically trained chefs and BBQ. Glad he’s getting some much deserved publicity from this channel.

    Man those char siu colored burnt ends look absolutely divine, holy hell. This guys is an inspiration. As a cook for most of my working life, I have recently been dreaming and planning to open an operation very similar to what he's doing here. Was so cool to watch someone do basically exactly what I've been planning.

    Had the best food of my life at ZEF! The congee and ramen absolutely blew me away and they have the Texas bbq down pat too. A must try place if you’re in SoCal. Logan and his family/team are amazing, loved my time there and can’t wait to go back!

    I own a wing pop up spot here in SFV in LA and I love that you shed light on his spot, from seeing him go to the same store I go to and just the overall grind is great to see. The process from start to finish was amazing.

    I think it’s so cool you are filling that void of consistent behind the scene bbq content and you do such a great job in editing.     This guy was absolutely ROBBED in that Netflix BBQ Showdown. Those judges are 100% traditionalists which, mind you, isn't necessarily bad. My beef with that show is that BBQ is a cooking methodology and this guy was SO creative with what he made! The other guy was absolutely talented, no doubt, but he stuck to tried and true recipes for American BBQ that I could find in any major city.

    This guy (Sandoval) was terrible in college!!! Gross jokes, sexist and racist. The time that particularly stands out was when he came into kitchen and non stop talked about one of our classmates who he had intimate relations with who was absent that day. He was totally demeaning and it was in really poor taste. The next day she was in, someone told her, basically the whole kitchen AND teachers knew. She was so shut down, dropped out after that, fully failed the final (she was so embarassed and shaking after knowing we all knew such embarrassing stuff about her, I don't think she could function.)
    It was a total chaotic end to a class, this guy didn't feel bad at all for it. Watching someone, even with little talent, lose their spark and zest for life because he couldn't keep his mouth shut in a professional place was appalling.
    Total bad taste.

    Poor Chubba. HAHA. I hope he figures out whats going on that makes him late all the time. I know for me it was procrastination, alcohol, and arrogance in knowing how great I am at what I do. But ultimately you cant live that way forever. Even in success with that, order is still more necessary for your own personal sanity imo.

    That's a lot of work for $1600 of revenue -hopefully not considering their entire revenue for the week. I applaud them for being self-sufficient. It seems to me they can greatly expand the operation to bring in better revenue a multitude of ways. Kudos!

    In europe, those restaurants are seen as bad restaurants.
    Good restaurants have specific vegetable/meat/dairy supplier coming every day/week to supply.
    You get better price, better product

    Man, that photo of Logan and the Meadow Creek Reverse Flow! Fun story, that's a rental from BBQ HQ. Logan used that sucker for a long time before buying his smoker. Jeremy from Mad Scientist BBQ used to cook with that exact rental from BBQ HQ. He even has a few instructional videos using that exact smoker. We've talked to BBQ HQ about renting the Meadow Creek to help with a cook for an event, but the cook fell through.

    Curious how he keeps the tri tips after smoking them, said he roasts them day of service, so it's like a reverse sear with a day in between lol
    Heritage bbq said in your video there that they cold smoked their tri tips, then throw them over fire before service.
    I am happy with how my tri tip turns out, but if I make much more than say 20 or so it gets difficult to manage.

    I was wondering, if there’s a place that would be willing, could you maybe dive into the business side of things with them a bit more? It seems impossible to me that they make a profit given the cost of goods, labour, etc. Would love some insight into that side of things.
