I've been out scouting for elderberry shrubs already in my local area where I found them last year. The shrubs appear to have been hacked down. I'll need to be vigilant and find a good supply.

În România we make juice from elderflowers. We put it în a jar with some sqeezed lemons and honey , water until they are covered and let it ferment for a few days (if you want it with bubbles you ad a bit of yeast ) then fill the jar with water and let it with the cap on 3 days . It's tasty

I make my elderberry syrup with fresh ginger and osha root. I've made it through the last 3 winters without getting sick with flu or cold (despite spending time with grandkids who got sick). Just before Covid hit, I had a mild 3 day bout of what was likely the flu (caught from a grandson who got sick while in my care.) I thought I was in for a good 2-3 weeks of being under the weather, but by day 4, I'd clearly turned the corner, and was on the mend!

First in winter i use elderflower tincture to boost my immunity but al also have elderflower vinegar and the best of all: elderflower jam on a scone. I also dry elderflower for tea. The berries are used to make cough sirop (with other herbs) or just a sirop to give a tast to water
