I like reading this because as a foodie it really irks me when cultures gatekeep their food. Even if you don't like something leaving a more constructive criticism is much more encouraging for people to try new foods. I cook a lot of foods I've never had before, so I don't know what they're "supposed" to taste like BUT I do know whether or not I like what I cook. I haven't done it yet, but I dread uploading something for culture nazis to rip apart.
I also do this using tortillas, I omit the cream cheese and add mozzarella cheese in between the spinach mixture ( or any cheese of your liking). I call this my Spanakopita Quesadia

As a Greek I suggest to put in the mixture an egg so to keep all the ingredients together. you can spare the cream cheese which is not Greek.
Or you could just make it this way... Does it matter if cream cheese isn't Greek if it tastes good? Or is it really that important to you.

Cream cheese comes in blocks. You can cut it and smush it.
Dumb question, but this makes 4 sandwihes, using 8 slices of bread? In the video, you're only using 4 slices of bread, making 2 sandwiches.
