I wonder if this was a mistranslation of whatever source he was looking at? Romans used plenty of grains and have plenty of documented recipes similar to the one Mario uses (though obviously without the corn, sugar and other more modern ingredients). Ricotta, spelt and honey was a common combo in making honey cakes.
